Steps:
- Cook pasta until tender, about 8 minutes.
- Meanwhile, cook garlic and pepper flakes in oil over med heat for 2 minutes Add broccoli, cover and cook 4 minutes.
- Add tomatoes, stir fry for 3 minutes.
- Add parsley, salt and pepper.
- Drain pasta reserving 3/4 cup of cooking water.
- Combine broccoli mixture and pasta.
- Toss to coat adding enough water to moisten.
- Serve with Asiago cheese.

LINGUINE WITH CHERRY TOMATOES
This looks and is so simple, but it will fool you as to how delicious it is. Its because of the sweet cherry tomatoes. Nice meal to make at the heat of the summer when you don't feel much like cooking. A fellow worker gave me the recipe and said make sure you try this !

- 1. Cut tomatoes in half. Mix together olive oil, vinegar, salt and pepper, whisk well. Marinate cut tomatoes in dressing for at least 2 hours or overnight. Just before serving, cook linguine per package directions. While pasta is boiling, toss the bread crumbs in a bit of olive oil. Warm tomatoes and dressing in a pan over very low heat, just to remove chill. Add pasta to pan and toss with the tomatoes. Serve, garnished with bread crumbs.
- 2. Hint: The secret of this dish is VERY sweet and Very RIPE tomatoes. If you have large tomatoes, that fit this description, use them quartered. This taste really good served with crumbs made from garlic bread !

BROCCOLI WITH LINGUINE
This recipe looks a little off beat, but is actually quite delicious! You can use bought linguini of course, but is even better if you make your own. This recipe was listed in 'The Age' newspaper's epicure section a couple of months ago and I've made it a number of times since then! My mum always saves recipes in the papers that she thinks I'll like... Thanks mum!

Steps:
- Preheat the oven to 100°C Place a large serving bowl inside to warm.
- Bring a large saucepan of salted water to boil. Drop in the trimmed broccoli. When the water returns to the boil, cook for 2 minutes exactly and then scoop the broccoli into a colander resting over a mixing bowl.
- Heat the oil in a large heavy-based non-stick frying pan over medium heat. Saute the garlic for a few seconds until it smells gragrand and add the anchovies. Stir with a wooden spoon until th eanchovies have melted. Tip in the chilli and the reserved broccoli.
- Bring the broccoli cooking water back to the boil and drop in the pasta. It will take just 2-3 minutes to cook.
- As soon as the pasta is ready, drain it through the colander now resting in the sink, give it a big shake and then tip it into the frying pan, with the butter and parmesan. Toss well and transfer to the heated serving bowl.

- Prepare pasta according to package directions and drain completely.
- Steam broccoli until fork tender, drain completely.
- Cut tomatoes in half.
- In skillet over medium heat melt butter in olive oil.
- Add garlic and cook for 2-3 minutes.
- Put the prepared pasta in skillet and toss to coat.
- Add the tomatoes and toss for 2-3 minutes.
- Add the broccoli and toss 1-2 minutes.

- In a large skillet or Dutch oven, bring water to a boil. Add spaghetti; boil, uncovered, for 5 minutes. PASTA WITH BURST CHERRY TOMATOES
This recipe may seem like it calls for a lot of mint, but that's what makes this easy pasta dish so refreshing. Cooking halved cherry tomatoes in olive oil until they burst condenses their flavor and caramelizes their edges, and makes a very intense base for the pasta sauce in this dish. Pancetta adds richness and a salty tang, but if you'd rather leave it out, you can. Just toss in some grated pecorino cheese at the end along with the butter.

- Bring a large pot of heavily salted water to a boil. Add pasta and cook until 1 minute shy of al dente. Drain pasta, reserving 1/2 cup pasta cooking water.
- Meanwhile, heat a large skillet over medium-high heat for 15 seconds, then add the oil and heat until it thins out and easily coats the pan when swirled. Add pancetta and cook until it starts to render its fat, about 2 minutes. Add garlic, red pepper flakes and a large pinch of salt and pepper and cook until fragrant, about 2 minutes. Add tomatoes and cook until they burst, turn golden at the edges and shrivel up slightly, about 5 to 8 minutes.
- Add pasta to pan and toss with tomato-pancetta mixture; if the mixture looks dry add a little pasta cooking water a few tablespoons at a time. Cook over high heat until the pasta finishes cooking in the sauce. Add the butter and toss until it melts and coats everything.
- Divide pasta among warmed pasta bowls. Garnish with dollops of ricotta if desired, and top with a generous mound of fresh mint and scallions. Drizzle with olive oil and sprinkle with sea salt and more pepper before serving.
