LITTLE JOE'S SPAGHETTI SAUCE
Little Joe's was a very popular Italian restaurant located just north of the Los Angeles Civic Center. It's now closed and the space is used as a movie set. However, the popularity of this recipe lives on and, years later, is still being requested for publication in the local newspapers. I think it deserves to be immortilized at 'Zaar.

Steps:
- Heat oil in a large heavy pot.
- Add onion, green pepper, celery and garlic and saute until vegetables are tender.
- Add tomatoes, tomato puree, basil, oregano,and bay leaf.
- Simmer for one hour, stirring frequently.
- Add wine, water, salt and pepper.
- Simmer one hour longer.
- If sauce is too thick, add water.
- When sauce is cooked, add Parmesan cheese and mix well.

Steps:
- Heat oil in a large skillet. Add onion, and cook over medium heat until soft. Add beef, mixing with onion and breaking it up into bits with a fork. Cook until no longer red.
- Add spinach. Mix well. Cook, stirring for 3 to 4 minutes, until spinach has wilted. Add salt to taste. Mix a dash of Tabasco with eggs, then pour eggs over beef. Stir until eggs set. Transfer mixture to a warm platter, and sprinkle with cheese.
SLOPPY JOE SPAGHETTI
I invented this recipe using Sloppy Joe sauce when I didn't have spaghetti sauce on hand!

Steps:
- Bring a large pot of lightly salted water to a boil. Add pasta and cook for 8 to 10 minutes or until al dente; drain.
- In a large skillet, brown beef over medium heat; cook until no longer pink and drain. Add sauce and simmer on low.
- Add green bell pepper and onion; mix well. Remove from heat and immediately mix in bread crumbs and cheese.
- Add sauce to pasta; serve immediately.

SPAGHETTI SLOPPY JOES
Spaghetti is one of my favorite meals, so I came up with this recipe to have a variation. I also had my dad in mind when I thought of this, because he loves Sloppy Joes. I knew he would just love this and he did. It is another recipe that I just thought of... I am not sure if it has been done before, but this recipe is really good.

- Heat a large skillet over medium-high heat. Cook and stir ground beef, onion, bell pepper, Italian seasoning, and salt in the hot skillet until beef is browned and crumbly, 5 to 7 minutes.
- Add mushrooms and cook for 2 minutes. Stir in pasta sauce, cover, and cook until sauce has reduced slightly, 5 to 10 minutes longer.
- Serve Sloppy Joe mixture on hamburger buns with a slice of mozzarella cheese.

JO MAMA'S WORLD FAMOUS SPAGHETTI
My kids will give up a steak dinner for this spaghetti. It is a recipe I have been perfecting for years and it is so good (if I may humbly say) that my kids are disappointed when they eat spaghetti anywhere else but home! In fact they tell me I should open a restaurant and serve only this spaghetti and garlic bread. In response to requests, I have posted the recipe for Recipe #28559 that uses approximately 1/2 of the sauce from this recipe. Have spaghetti one night and lasagna later! Thanks to all of you who have tried my recipe and have written a review. I read and appreciate every one of them! Chef Note: After I posted this recipe I remembered a funny incident--my dear husband usually has a nice bottle of wine handy so when I make a batch of spaghetti I just help myself to a splash of it. On one occasion, there wasn't a bottle opened, but there was a bottle sitting on the counter so I got out the corkscrew and helped myself. For some reason, the spaghetti that night was the best ever. My husband asked what wine I put in it and I showed him the bottle. He nearly fell off the chair. I had opened a rather expensive bottle he had bought to give his boss. Goes to show you--don't use a wine for cooking you wouldn't drink. You get the best results from a good wine!

Steps:
- In large, heavy stockpot, brown Italian sausage, breaking up as you stir.
- Add onions and continue to cook, stirring occasionally until onions are softened.
- Add garlic, tomatoes, tomato paste, tomato sauce and water.
- Add basil, parsley, brown sugar, salt, crushed red pepper, and black pepper.
- Stir well and barely bring to a boil.
- Stir in red wine.
- Simmer on low, stirring frequently for at least an hour. A longer simmer makes for a better sauce, just be careful not to let it burn!
- Cook spaghetti according to package directions.
- Spoon sauce over drained spaghetti noodles and sprinkle with parmesan cheese.

Steps:
- In frying pan, heat the oil then sauté the garlic quickly (do not burn) .
- Add the veal and peppers. Once peppers are tender, add the mushrooms and the onions. Let the dish simmer for 15-20 minutes.
- Once simmered, add the tomato paste and mashed tomatoes. Let simmer and additional 5 -- 10 minutes. Season with the spices and herbs then simmer for 20 minutes. Adjust seasoning if required.
- Remove the basil leaves and serve over pasta.
