PERFECT LOBSTER TAILS

We tried lobster tails every which way -- steamed, baked, grilled, broiled -- and this is our favorite. Fast and foolproof, this recipe is your ticket to an impressive main course in minutes.

Steps:

  • Preheat the broiler. Place a wire cooling rack inside a rimmed baking sheet. Cut the top shell of the lobster tails lengthwise down the middle with kitchen shears. Then, using a knife, cut all the way through the tails to split into 2 pieces. Place them flesh-side up on the prepared baking sheet.
  • Mix together the butter, parsley, shallot, lemon zest, 1/2 teaspoon salt and a few grinds of pepper in a small bowl until well combined.
  • Spread 2 teaspoons of the compound butter on the flesh of each lobster tail half. Broil until the shells turn a bright orange, the flesh is opaque and cooked through and the tails begin to curl, about 4 minutes.
  • Transfer the tails to a serving platter and top each half with another teaspoon of the compound butter (save the remainder for another use).

Four 5- to 6-ounce frozen lobster tails, thawed (see Cook's Note)
1 stick (8 tablespoons) unsalted butter, at room temperature
1 tablespoon chopped fresh parsley
1 tablespoon minced shallot
1 teaspoon lemon zest
Kosher salt and freshly ground black pepper

Broiled Lobster Tails with Clarified Butter image

Steps:

  • 1. Preheat the broiler. Place lobster tails on a baking sheet. With a sharp knife or kitchen shears, carefully cut top side of lobster shells lengthwise. Pull apart shells slightly, and season meat with equal amounts melted butter with garlic, old bay seasoning, paprika, salt, and white pepper. Place cookie sheet or pan on rack second-up from the bottom of your oven. Broil lobster tails until lightly browned and lobster meat is opaque, about 25-30 minutes. Serve with lemon wedges and clarified butter for dunking. Clarified butter: Cut butter into 8-10 pieces. In saucepan or small frying pan, melt butter slowly over low heat. The water in the butter will evaporate, and the milk solids will sink to the bottom of the pan. Froth will rise to the top. Skim froth from surface. Carefully ladle or pour off clear melted butter into another container, leaving the milk solids at the bottom of the saucepan. You can also strain the butter through a double layer of rinsed and squeezed cheesecloth. But I never have that on hand! For a nice presentation, open shell just enough to lift meat out carefully and gently lay lobster meat on top of shell. (All the way or leave very tail-end still attached.)

2 whole lobster tails, 1 lb. each
1/4 cup butter, melted
1/8 tsp. garlic powder
1/2 tsp. old bay seasoning
a little salt to taste
paprika, lightly dust each
white pepper, lightly dust each
1 lemon cut into half slices or wedges
CLARIFIED BUTTER:

  • Lobster tails usually come whole and not de-shelled. Use kitchen shears to cut the top of the shell right down the center all the way to the fanned tail, then stop. You can also cut the bottom along the same route. Wiggle your fingers around the connective tissues to loosen the meat. Gently pull it up through the incision and set on top of the shell. Setting it on top is not only aesthetically pleasing, it allows the warm air to circulate around the meat to cook evenly. Repeat with remaining tails.
  • In a small saucepan, heat clarified butter with lemon juice, lemon zest and hot sauce over very low heat, just enough to keep it in liquid form.
  • Place lobster tails on a broiler pan or rimmed baking sheet about 6-9 inches away from the broiler coils while keeping a watchful eye. Broil for approximately 3-4 minutes. Time will vary greatly depending on size of the lobster tail, your oven and distance from the heating mechanism. Lobster tails are done when the meat has turned an opaque white and the shells a brilliant red.
