SPICY BEEF SALAD

This recipe was inspired by my love of spicy flavors and light, nutritious entrees. The pretty salad has an appealing variety of textures. I make it year-round because it's fast and easy to prepare after a long day at work. -Peggy Allen, Pasadena, California

Spicy Beef Salad image

Steps:

  • Partially freeze beef. Slice across the grain into thin strips; set aside. For dressing, combine lime juice, sugar, soy sauce, basil and mint; set aside. , In a medium nonstick skillet coated with cooking spray, saute the jalapeno, garlic and ginger for 30 seconds. Add beef; stir-fry until cooked as desired. Remove beef from pan; gently toss with red pepper and cucumber. , Place greens in a large bowl or divide among individual bowls or plates; top with beef mixture. Add dressing to pan and bring to a boil; remove from the heat and drizzle over salad. Serve immediately.

1/2 pound boneless beef sirloin steak
1/3 cup fresh lime juice
1 tablespoon brown sugar
1 tablespoon soy sauce
1 tablespoon minced fresh basil or 1 teaspoon dried basil
2 teaspoons minced fresh mint or 3/4 teaspoon dried mint
1 jalapeno pepper, minced
2 to 3 garlic cloves, minced
1 teaspoon grated fresh gingerroot or 1/4 to 1/2 teaspoon ground ginger
1 large sweet red pepper, julienned
1/2 medium cucumber, chopped
6 cups torn mixed salad greens

LORI'S BEEF AND GRAVY

I learned how to make this dish in Home Ec. while attending German school. It's one of my kids favorite dinners. Note: This recipe ends up with a lot of gravy. I usually like that, because I can freeze some for other sauce-less beef or just over mashed potatoes/rice/noodles on a meatless night.

Lori's Beef and Gravy image

Steps:

  • Place the cubed beef in a medium sized pot. Add water. Include the bouillon cube. Cover and simmer for 1 hour.
  • Separate the meat from the broth and keep the liquid hot.
  • In a skillet on medium heat melt the butter, sauté the onions until transparent then add garlic. Continue until you can just smell the garlic aroma.
  • Sprinkle in the flour and cook until slightly brown. Using a whisk, pour in the hot broth until the sauce is smooth and thickened. Place the meat in the gravy and continue cooking covered on low for another 1/2 hour.
  • Peak in and stir every so often adding water if needed to get the desired gravy consistency that you prefer.
  • Taste for salt and pepper. add freshly grated nutmeg to taste if using.
  • I have served this over potato dumplings (packaged or homemade), rice, mashed potatoes, noodles.

Lori's Beef and Spaghetti Macaroni image

Steps:

  • In a medium pot with boiling salted water cook macaroni pasta until al dente. Drain.
  • In a large skillet cook hamburger and onion until brown. Drain grease. Add mayonnaise and spaghetti sauce; mix well. Add drained and cooked macaroni, cook on medium heat stirring occasionally until heated through. Mix thoroughly.
  • To serve, pour mixture into a large serving bowl and top with shredded Cheddar cheese. Serve warm.

LORI'S TUNA SALAD

This is a hit at BBQ parties! It is the unwritten rule that I bring this to any of my friend's parties. It is great in the summer and kids like it too! All ingredients are guesstimates and should be adjusted according to your preference. Note: for parties I usually double the recipe because it goes fast! Fast and easy to make, the longest part is making the noodles

Lori's Tuna Salad image

Steps:

  • Cook noodles according to package directions, drain and rinse in cold water.
  • In large bowl combine noodles, onion, celery, green pepper and tuna. Mix together with the Light Miracle Whip (I usually put in about half the jar then decide if more is needed, according to taste).
  • Top the salad with the shredded mild cheddar cheese
  • Place the hard boiled eggs on the top of cheese.
  • Sprinkle Lawry's Seasoning Salt and black ground pepper on the eggs (makes for nice show appeal).
  • Chill in refrigerator.

  • Cook the beef: Add the beef to a pot of boiling water and cook it for about 2 hours. You can also use an Instant Pot to cook it faster. If using an Instant pot cook it on high pressure for 35 minutes. Transfer the meat to a bowl and let it cool before chopping.
  • Cook the potatoes and carrots: Add the potatoes and carrots to a large pot and cover with water. Season with the tsp of salt. Bring the water to a boil and cook the potatoes and carrots until they are fork tender, should take about 15 minutes. Drain and cool slightly.
  • Prep the veggies and meat: Chop the meat, potatoes, carrots and pickles; they should all be small pieces about 1/4 inch by 1/4 inch. Drain all the juice from the diced pickles and the peas. I usually place them in a paper towel lined bowl to soak up all the extra liquid.
  • Make the salad: Add all the veggies and meat to a big bowl, then add the mayo and mustard, season with salt and pepper and mix everything together. You will end up with a big bowl of salad, traditionally we smooth out the top of the salad with a knife and spread more mayonnaise and smooth that out.
