KAHLUA® HOMEMADE
This recipe I love to make around Thanksgiving to drink or give as presents at Christmastime. The longer you wait the better it is, try and wait 4 weeks. I got this recipe from one of my own concoctions from trying several different recipes.

Steps:
- Combine water and instant coffee in a pot; bring to a boil. Stir light brown sugar and dark brown sugar into coffee, reduce heat, and simmer, stirring every 15 minutes, for 3 hours. Remove from heat and cool completely.
- Pour coffee mixture into a clean, large glass jar. Add grain alcohol, vanilla extract, and vanilla bean; cover with a tight-fitting lid. Let sit in a dark place, shaking occasionally, for 1 month. Divide into bottles, leaving a piece of vanilla bean in each.

LOW CARB KAHLUA LIQUEUR
This doesn't get syrupy, but it tastes just like the real thing, with hardly any calories. (Unless you add cream to it!)

Steps:
- Combine the water, splenda, vanilla and coffee in a saucepan and heat over medium heat, stirring occasionally until the splenda and coffee are dissolved.
- Remove from the heat and add the vodka.
- Cover and let cool.
- Store in an empty bottle with a screw top/resealable lid.
- Store in a cool dark place - best if stored about 30 days before drinking.

LOW CARB KAHLUA
I got this recipe years ago when I was doing the Atkins Diet, but lost it. I was overjoyed to find it again. It's quick and easy, and delicious!

Steps:
- In a large pitcher or measuring cup combine water, sugar substitute, coffee crystals, and vanilla. Stir until all dry ingredients are completely dissolved.
- Pour through funnel into a 1.5 - 2 liter bottle (I use an empty wine bottle; just be sure to save the cork, or use a screw-top bottle). Add the entire bottle of vodka. Cork, then shake well.
- You can drink it immediately, but it gets better if you can stand to let the flavors marry overnight.
