LOW-FAT COCONUT CREAM (OR MILK) SUBSTITUTE

I used Recipe #113203 and the standard substitution for coconut cream to come up with this. I tried this recipe out in Recipe #274534 and Recipe #274527 with good results.

Low-Fat Coconut Cream (Or Milk) Substitute image

Steps:

  • Combine and in a blender. Puree for 5 minutes or until smooth.
  • Most of the time Coconut Cream is sweet so you can add the sugar if you want.
  • The above recipe is for Coconut Cream to make Coconut Milk Substitute: For 1 cup, use 3 tablespoons "low-fat coconut cream substitute" plus hot water or warm low-fat milk to equal 1 cup.

8 ounces low fat cottage cheese
3 tablespoons non-fat powdered milk
1 teaspoon coconut extract
1 tablespoon sugar (optional)

Steps:

  • For the milk:
  • Place 2 ounces of the coconut into a small mixing bowl and pour over the boiling milk. Stir to combine. Cover tightly and allow to sit for 1 hour. Transfer the mixture to the carafe of a blender and process for 1 minute. Place a tea towel over a mixing bowl and carefully pour the mixture into it. Gather up the edges and squeeze until all of the liquid has been removed. Discard the coconut. You may use the milk immediately or store in the refrigerator for up to 2 days.
  • For the cream:
  • Repeat the same procedure as above only using 4 ounces of freshly grated coconut.

4 ounces freshly grated coconut, approximately 1 cup

Steps:

  • Note: Do NOT use soy milk, it does not work.
  • Simply blend until smooth and refrigerate.
  • Note: use short grained rice to make soy free.
  • Coconut cream: 1/2 cup tofu or rice and 1/2 cup of the milks.
  • To make a thinner version omit tofu/rice and use 1 cup rice or almond milk.
