LOW-FAT SLOW COOKER GLAZED MEATLOAF
This slow cooker meatloaf is lower in fat and cholesterol because you use 1/2 ground round and 1/2 ground turkey breast. This meatloaf will be moist, but not as greasy as other recipes for a slow cooker. May have some for leftovers, too!

- Grease a slow cooker with cooking spray.
- Combine ground round and turkey in a bowl; mix until fully combined. Stir in bread crumbs, soup mix, parsley flakes, black pepper, and garlic powder. Add eggs, 1/4 cup ketchup, and mustard; mix well. Form meat mixture into a loaf. Place in the slow cooker. Cook on High until no longer pink in the center, about 6 hours. An instant-read thermometer inserted into the center should read at least 160 degrees F (70 degrees C).
- Mix 3 tablespoons ketchup and brown sugar together in a small bowl to make the glaze. Spread over the meatloaf; continue cooking until glaze is set, about 1 hour more.

- In a large bowl combine the turkey, egg, salsa, red bell pepper, yellow bell pepper, onion, bread crumbs and lemon pepper. Mix well with hands until blended. Roll into a small loaf and place on a foil-lined baking sheet.

- Preheat oven to 400 degrees.
- Lightly spray a nonstick or silicone muffin pan with nonstick cooking spray.
- Crumble ground beef into a large bowl.
- Add shredded carrots, chopped onion, and green pepper.
- Add chili powder, Worcestershire sauce and the breadcrumbs. Stir with a fork. Add egg whites and stir again with a fork until well blended. You can knead the mixture with your hands but sometimes this makes the meat overly tough.

- Heat oven to 180C/160C fan/gas 4. Heat the oil in a large frying pan and cook the onion for 8-10 mins until softened. Add the garlic, Worcestershire sauce and 2 tsp tomato purée, and stir until combined. Set aside to cool.
- Put the turkey mince, egg, breadcrumbs and cooled onion mix in a large bowl and season well. Mix everything to combine, then shape into a rectangular loaf and place in a large roasting tin. Spread 2 tbsp barbecue sauce over the meatloaf and bake for 30 mins.
- Meanwhile, drain 1 can of beans only, then pour both cans into a large bowl. Add the remaining barbecue sauce and tomato purée. Season and set aside.
- When the meatloaf has had its initial cooking time, scatter the beans around the outside and bake for 15 mins more until the meatloaf is cooked through and the beans are piping hot. Scatter over the parsley and serve the meatloaf in slices.

- Heat oven to 350 degrees.
- Combine in a large mixing bowl the turkey or beef, the spinach, which has been squeezed to drain, the oats, onion, carrots, egg, milk, herbs (mixture of oregano, basil and thyme), salt and pepper.
- Use a three-tined kitchen granny fork or wooden mixing fork to blend the meat ingredients.
- Pat into a 9x5-inch loaf pan that has been sprayed with a no-stick oil product, or shape into a loaf and place in the middle of a 13x9-inch baking pan.
- Bake 1 hour or until a thermometer registers 170 degrees and the center is no longer pink.
