SUPER SIMPLE PERFECT CHOCOLATE GANACHE
A two-ingredient, microwave chocolate ganache that will taste and feel like luxury truffles. The ganache can also be rolled into balls and coated in cocoa powder, if desired.

Steps:
- Pour cream into a microwave-safe bowl; heat in microwave on high until very hot, 1 to 2 minutes. Add chocolate chips to heated cream; whisk until smooth.
- Place chocolate-cream mixture in the freezer until ganache is cold and starting to thicken, stirring every 5 minutes, about 10 to 12 minutes.
- Spoon ganache into a resealable plastic bag and refrigerate until completely cooled, 15 to 30 minutes.
- Cut a corner from the plastic bag and pipe ganache.

Ganache is a mixture of cream, or butter, and chocolate. Ganache can be made thick enough to use as a truffle filling or thin enough to use as a glaze. A 'thin' Ganache can be melted to use as a glaze or whipped, and used as a filling for cakes. Use the best quality chocolate you can find.

Steps:
- Chop the chocolate into small pieces and place it in a large stainless steel bowl.
- In a large, high sided saucepan, heat cream over medium high heat, stirring frequently, until it starts to boil. At this point, the cream will want to boil over, so keep an eye on it! Immediately remove from heat and pour over chopped chocolate.
- Stir until chocolate is completely melted and mixture is smooth. Cool completely and then store in refrigerator. Ganache can be reheated in a stainless steel bowl over hot, but not boiling, water.

LIGHTER CHOCOLATE FONDUE (OR GANACHE)
This is an amazingly dark, rich and sinful fondue with a lot less fat. Make sure to use the best quality chocolate you can get your hands on, since that is your main flavor here. I have listed the things we like to dip in our fondue; other ideas are cherries, dried apricots, walnut halves, marshmallows or anything else that sounds good to you! This could also be used as a ganache. I always wondered if I could make a lower fat ganache without whipping cream, and here it is (and surprisingly, it takes almost the same)! Use to frost cupcakes or fill cakes. Slightly adapted recipe from Ellie Krieger's Healthy Appetite on Food Network.

Steps:
- Cut angel food cake into bite size wedges.
- Peel and cut banana into one inch chunks. Core and slice the pear or apple.
- Place the bananas, pears and strawberries on a serving platter. Squeeze orange wedge over banana and pear (or apple) and mix gently.
- In a medium saucepan, whisk together cocoa powder and sugar. Slowly pour in evaporated milk, all the while whisking, to make a paste.
- Place the saucepan over low to medium heat and cook, stirring constantly, until chocolate base is simmering.
- Remove pot from heat and whisk in vanilla and chocolate. Keep stirring until chocolate is completely melted. The mixture will be quite thick.
- Transfer chocolate to a fondue pot to keep warm. If you do not have a fondue pot, try serving the fondue in a warmed ceramic bowl.
- Dip fruit in chocolate. Spoon chocolate over angel food cake (it is too delicate for dipping) and enjoy!
- Store leftovers in the refrigerator. Rewarm by microwaving 35-45 seconds, stirring every 10 seconds.

Steps:
- Chop chocolate into small pieces and place in a heat safe bowl.
- Bring cream to boil on stovetop.
- Once cream in boiling pour over chopped chocolate.
- Add lemon zest and lemon juice.
- Stir from the inside out, making sure not to let in to much air.
- Stir till chocolate is completely melted.
- That's it--you now have ganache. You can use this on cakes, to make truffles or just cool it in the fridge and snack on it later.
- You can also substitute the lemon with orange.
