LUCINDA'S BLOODSHOT ONE EYE

This recipe comes from Lucinda Scala Quinn, Host of "Mad Hungry," on the Hallmark Channel and puts playful spin on breakfast.

Lucinda's Bloodshot One Eye image

Steps:

  • With a 2-inch round cookie cutter, cut a hole in the center of each piece of bread, reserving cutouts. In a large nonstick skillet, melt 1 tablespoon butter over medium-high. Add cutouts and bread and cook until lightly brown on undersides, about 3 minutes.
  • Add 3/4 teaspoon butter to hole of each piece of bread. Arrange pepper strips in holes to resemble a pinwheel. Crack 1 egg into each hole and season with salt and pepper. Cook until egg whites are set, 1 minute. Gently flip bread and cutouts and cook 2 minutes more (yolks will be runny). Serve pepper side up with toast cutouts for dipping.

1/3 of a jarred roasted red pepper, cut into 2-inch-long thin strips

BLOODSHOT ONE EYE

This is a twist on a more traditional egg dish, "egg-in-a-hole." A hole is made in a slice of toast, and an egg is cracked into the hole and cooked into the bread. This version adds a sweet red pepper along with the egg.

Steps:

  • Using a 2-inch round cookie cutter or a drinking glass, cut a hole in the center of each piece of bread. Swirl 1 tablespoon of butter in a hot, nonstick skillet. Add the bread and the cut-outs to the pan to lightly brown, about 2 minutes.
  • Add a small piece of butter to each hole. Lay down strips of pepper to resemble a "bloodshot" eye. Crack an egg into each hole. Season with salt and pepper.
  • Let it cook until set, about 1 minute. Carefully turn the bread slice and the round cutouts and cook on the other side for another minute. Serve bloodshot side up with the cut-out toast for dipping.

2 slices of white bread
1 1/2 tablespoons unsalted butter
6 thin strips roasted red pepper (from a jar)
2 eggs
Salt and freshly ground black pepper

Linda's Bloodshot Eyeballs image

Steps:

  • In a small mixing bowl, combine the confectioners sugar, peanut butter, and butter.
  • Shape into 1" balls, and place on a waxed paper lined pan.
  • Chill for 30 minutes, or until firm.
  • In a microwave, melt white candy coating. Stir until smooth.
  • Dip balls in coating, and place on waxed paper.
  • Immediately press one Reese's Pieces or M&M candy on top of each eyeball for pupils. Let stand for 30 minutes, or until set.
  • In a small bowl combine water, food coloring, and confectioners sugar. Mix well.
  • Transfer to a heavy-duty resealable plastic bag.
  • Cut a small whole in a corner of the bag.
  • Pipe wavy lines downward from the candy, creating the look of bloodshot eyes.
  • Store eye balls in an airtight container.
