BUTTERNUT MAC 'N' CHEESE

- Preheat the oven to 400 degrees F.
- Bring a pot of water to a boil. Cook the macaroni until al dente according to the package instructions. Drain, rinse with cold water to stop the cooking process and set aside.
- Carefully cut the butternut squash in half lengthwise and remove the seeds. Drizzle half of the squash with olive oil and place it on a rimmed baking sheet cut-side up (reserve the other half of the squash in the fridge for another use). Roast, watching to make sure the surface doesn't get burned (it should have some brown areas, however), until fork-tender, 20 to 25 minutes. Scrape out the flesh into a bowl and mash with a potato masher. Sprinkle with salt and pepper and set aside.
- While the squash is roasting, add the onions and 2 tablespoons of the butter to a large, ovenproof skillet over low to medium-low heat. Cook the onions, stirring occasionally, until they're deep golden brown, about 20 minutes. Remove them to a plate.
- In the same skillet, melt 4 tablespoons of the butter over medium-low heat. Sprinkle over the flour and whisk it to make a thin paste. Cook it for 2 minutes, then whisk in the milk. Cook, whisking gently, until slightly thick, a couple of minutes. Taste and adjust the seasonings. You'll probably want to add more salt!
- Turn the heat to low and stir in the mashed butternut squash. When it is warm, stir in the cheese. If the sauce is overly thick when the cheese is melted, add a splash of milk. Keep stirring until the sauce is nice and hot, then stir in the macaroni. Taste and add more salt if needed.
- Melt the remaining 2 tablespoons butter in a pan and combine it with the breadcrumbs. Sprinkle the breadcrumbs over the macaroni and bake (I do it straight in the skillet) until the crumbs are golden and the edges bubbly, about 15 minutes. Serve immediately.

- 1. Heat oven to 425^. Spray 2 baking pans lightly with oil; place thawed drummettes on pans so there is space around each piece. Bake in oven for 45 minutes-until crispy and done. When done place hot wings in heavy bowl or pan and pour prepared glaze over wings and toss to cover evenly. Place on serving plate and Enjoy!
- 2. Choose the glaze you wish to use and place the ingredients in a saucepan over medium heat and bring to a boil- turn heat to simmer and cook for 15 minutes-until mixture thickens slightly. When wings are done- pour glaze over wings in a heavy bowl or pan and toss to coat evenly. Place wings on serving platter.Enjoy
- 3. Note: After drummettes are roasted and tossed in the thickened glaze- they can be placed back in the hot oven and baked 20 minutes more with a second basting in the sauce after 10 minutes. They are extra gooey this way. They will look like this. I used 2 of the recipes above.
BROWN-SUGAR BBQ CHICKEN DRUMETTES

- In a medium bowl, whisk together ketchup, sugar, Worcestershire, and vinegar; season with salt and pepper. Set aside 1 cup sauce for tossing raw chicken; use rest for baked chicken.
- Preheat oven to 450 degrees, with racks in upper and lower thirds; line 2 rimmed baking sheets with aluminum foil.
- Divide drumettes between baking sheets, and toss with reserved 1 cup sauce.
- Bake chicken until opaque throughout, 30 to 35 minutes, rotating sheets and tossing chicken halfway through. Toss baked drumettes with 1/2 cup sauce, and serve with remaining sauce on the side.

- Mix the soft cheese with the honey and set aside. Peel the apples, then slice each through the core into five or six rings, about 1cm thick. Use an apple corer or small round biscuit cutter to stamp out a circle from the middle of each slice, removing the core and creating 'doughnut' shapes. Pat the slices dry using kitchen paper - they should be as dry as possible to help the toppings stick.
- Spread some nut butter over the slices, if using, then top with the sweetened soft cheese. Decorate with the sprinkles and serve.

- Line a 13 x 9 x 2-inch pan with foil; set aside.
- In a large bowl, combine flour, salt, baking soda, paprika, pepper, sesame seeds, and macadamia nuts; set aside.

DOUGHNUT PAN MAC AND CHEESE RINGS
Crisp on the outside and gooey on the inside, these mac and cheese delights are baked in your doughnut pan -- a gadget you may have used once, then promptly stashed in the far back corner of your cabinet. Shaped like onion rings and served with marinara, these indulgent treats are stuffed with both mac and cheese and a layer of mozzarella -- for extra cheese pulls.

- Preheat the oven to 425 degrees F.
- Bring a pot of salted water to a boil. Add the macaroni and cook until al dente, about 6 minutes. Drain and set aside.
- Meanwhile, add the crackers to a large bowl and crush into fine crumbs with the back of a measuring cup. Add the breadcrumbs and mix to combine. Coat a 6-cavity nonstick doughnut pan with nonstick spray. Add half of the breadcrumb mixture to the cavities, tilting the pan and gently tapping it to spread around the breadcrumbs so they cover as much of each cavity as possible. It's okay if a few extra breadcrumbs remain at the bottom of each cavity.
- Heat the half-and-half and cayenne in a medium saucepan over medium heat until the mixture just comes to a simmer. Continue to simmer over medium-low heat until the half-and-half is reduced by a little more than half, about 2 minutes. Add the cream cheese and stir until melted. Stir in the Cheddar until all of the cheese is melted and the sauce is smooth. Add the macaroni to the saucepan and stir to combine. Season with salt if needed.
- Carefully fill each doughnut pan cavity halfway with the macaroni and cheese. Top each with a layer of mozzarella slices, then the remaining macaroni and cheese. Evenly cover each with the remaining breadcrumb mixture and gently pack down each ring with your fingertips. Lightly spray the top of each with nonstick spray.
- Bake until the cheese is bubbly and the breadcrumbs are lightly browned and crispy, 7 to 9 minutes. Let rest in the molds until the macaroni and cheese mixture stays together in a ring when you lift it out with the help of a butter knife, 5 to 10 minutes. Serve with marinara sauce.

- Taste and adjust flavor as needed, adding more nutritional yeast for cheesy flavor, salt for saltiness, lemon juice for acidity/brightness, or garlic powder for garlic flavor. Blend again to combine. If adding herbs, add at this time.
