MACARONI AND CHEESE FOR TWO
This is one of those dishes that our family calls "a Mama recipe." My mother rarely consulted a cookbook, so when asked for a recipe, she could only estimate. I've worked out the ingredients to make it for two, but it can easily be doubled. It's simply a good, wholesome dish most folks seem to enjoy. -Betty Allen, East Point, Georgia

- Preheat oven to 350°. In a medium bowl, combine macaroni, cheese, milk, egg and salt; mix well. Pour into a greased 1-qt. shallow baking dish; dot with butter. Bake, uncovered, until a knife inserted in the center comes out clean, 30-35 minutes.

CREAMY MACARONI & CHEESE - FOR TWO OR ONE
I shouldn't be surprised that there are more than 600 recipes for this dish. After reading many, many of them, I have come to the conclusion that this one has it's place here at Zaar. The sauce is smooth and creamy, with little pockets of melted cheese throughout. I hope you like this as much as I do. Cooking time includes the making of the sauce and baking.

Steps:
- Preheat oven at 350°F.
- Cook pasta in boiling salted water until al-dente. Drain and set aside.
- Heat the milk in the microwave, on high for 1-1/2 minutes.
- In a medium saucepan, melt butter. Add salt, pepper and chopped onion. Sauté on medium heat, until the onion is transparent and soft, but not brown.
- Sprinkle the flour on top, and allow the butter to absorb some of it before stirring.
- Add the hot milk in 3 additions, stirring constantly. The mixture will get thick very quickly.
- After the final addition of milk, continue heating the mixture, on medium heat, stirring constantly, until thick and bubbly.
- *Remove from heat* and stir in the grated cheese, chives and red pepper flakes.
- Add the drained pasta and mix well.
- Fold in the cubed cheese.
- Pour into two greased onion soup bowls.
- Bake for 20 - 25 minutes.
- Allow to cool a bit before serving.

DOUBLE-CHEESE MACARONI
A friend passed this recipe on to me and I made some changes that created this definite crowd pleaser. I make it for every family get-together and I haven't found anyone, child or adult, who doesn't love this ooey, gooey macaroni and cheese. -Sabrina DeWitt, Cumberland, Maryland

- Cook macaroni according to package directions. Meanwhile, place cottage cheese in a food processor; cover and process until smooth. Set aside. , In a large saucepan, melt butter. Stir in the flour, salt, pepper and garlic salt until smooth. Gradually add cream and milk. Bring to a boil; cook and stir for 2 minutes or until thickened. , Drain macaroni; transfer to a large bowl. Add the cheddar cheese, cottage cheese and white sauce; toss to coat. Transfer to a greased 13x9-in. baking dish. (Dish will be full.) Combine bread crumbs and butter; sprinkle over the top. , Bake, uncovered, at 400° for 20-25 minutes or until bubbly.

MAKE-TWO MACARONI AND CHEESE
From the Houston Chronicle, in response to a reader request. Very basic mac and cheese with mild flavor. When baked, the top gets nice and crunchy. Perfect for OAMC as directions for baking from frozen are included. Also very economical. I usually keep several foil pans of this in my freezer and throw one in the oven when roasting a chicken for a super easy meal. I like extra cheese on top.

- Preheat oven to 375 degrees.
- Cook macaroni according to package directions. Meanwhile, melt butter in large saucepan or Dutch oven. Whisk in flour, bouillon and dry mustard. Gradually add milk. Cook and stir until bouillon dissolves and mixture thickens slightly. Remove from heat.
- Add 2 cups cheese; stir until melted. Stir in macaroni. Turn into two lightly greased 1 1/2 quart baking dishes. Top each with one cup shredded cheese. Bake one dish 20 to 25 minutes or until hot and bubbly.
- Cover second dish tightly with aluminum foil; freeze.
- To bake frozen macaroni and cheese: Preheat oven to 375 degrees. Bake frozen casserole uncovered one hour or until bubbly and hot in center. (These are the directions in the original recipe; however, I usually bake covered so it won't dry out, then uncover at end to crisp up the top. If you choose to bake covered, allow for extra baking time.).
