BREAD MACHINE CHICKEN FAJITA PIZZA

Add some pizzazz to your pizza! Make the crust with your bread machine or the traditional way and top it off with this spicy chicken topping.

Bread Machine Chicken Fajita Pizza image

Steps:

  • Measure carefully, placing all crust ingredients in bread machine pan in the order recommended by the manufacturer. Select Dough/Manual cycle. Do not use delay cycles.
  • Remove dough from pan, using lightly floured hands. Knead 5 minutes on lightly floured surface (if necessary, knead in enough flour to make dough easy to handle). Cover and let rest 10 minutes.
  • Move oven rack to lowest position. Heat oven to 450°F. Grease large cookie sheet or 12-inch pizza pan. In 10-inch nonstick skillet, heat oil over medium-high heat. Cook chicken in oil 3 minutes, stirring occasionally. Stir in bell pepper and onion. Cook 3 to 4 minutes, stirring occasionally, until chicken is no longer pink in center and vegetables are crisp-tender; remove from heat. Stir in salsa.
  • Pat dough into 12-inch round on cookie sheet; pinch edge, forming 1/2-inch rim. Spread chicken mixture over dough. Sprinkle with cilantro and cheese. Bake 12 to 15 minutes or until crust is golden brown and cheese is melted.

Steps:

  • Preheat the oven to 425 degrees F. Meanwhile, heat the oil until hot in a grill pan or skillet over medium-high heat, then add the chicken. Cook thoroughly, about 5 minutes on each side, then remove from the pan.
  • Add more oil to the pan as necessary, and add the mushrooms, peppers, onions, fajita seasoning and 1/2 teaspoon each salt and pepper and cook until the vegetables are slightly tender, tossing with tongs periodically, about 5 minutes. Remove from the pan.
  • Place the naan on a baking sheet, pizza pan or baking stone. Top each piece with a layer of tomato sauce, followed by the chicken, vegetables and then the cheese. Bake until the cheese has melted, 10 to 15 minutes. Top the pizzas with the avocado, cilantro and freshly squeezed lime juice, if using, then divide each pizza in half and serve.

Steps:

  • Heat oil in large skillet.
  • Add chicken and cook, stirring frequently until lightly browned.
  • Stir in seasonings.
  • Add onions and bell peppers, cook an additional minute or so until vegetables are crisp-tender.
  • Heat oven to 425°.
  • Sprinkle pizza pan with semolina flour and press dough into pan.
  • Pre-bake dough until it is a very light golden brown, about 6 minutes.
  • Remove from oven and scatter chicken over crust, spoon salsa over chicken, spread vegetable mixture over that, and finally, top with cheese.
  • Bake for another 15 minutes until crust is golden brown.

Chicken Fajita Garbage Bread image

Steps:

  • For the garbage bread: Preheat the oven to 400 degrees F. Line a baking sheet with parchment.
  • Heat a large nonstick skillet over medium and add the oil. Add the chicken and cook, stirring, until browned and no longer pink, about 5 minutes. Transfer the chicken to paper towels to drain and return the skillet to medium heat.
  • Heat what oil is left in the skillet over medium heat, then add the onions and both peppers. Sprinkle with salt and pepper and cook, stirring, until lightly charred and slightly soft, about 10 minutes. Stir in the chili powder, coriander, cumin and garlic, and cook, stirring, until fragrant, about 1 minute. Transfer the vegetables to a bowl and stir in the lime zest.
  • Roll the dough into a 20-by-14-inch rectangle on a lightly floured work surface. Arrange the chicken strips evenly on one half of the dough, starting on the shorter end, leaving a 1-inch border on the sides. Spoon over the salsa verde and spread it evenly over the chicken. Sprinkle the Monterrey Jack over the sauce, then scatter the sauteed vegetables evenly over the cheese. Working from the short side, tightly roll the dough up, jelly roll-style, into a log. Pinch the open seams together to seal, then tuck them underneath the log.
  • Transfer the log to the prepared baking sheet and brush with the egg wash. Bake until the bread is golden brown, about 40 minutes.
  • For the green crema: Meanwhile, stir together the avocado, crema, lime juice and cilantro in a small bowl and season with salt and pepper.
  • Let the bread cool for 10 minutes. Halve the bread lengthwise, cut each half crosswise into 4 equal pieces and serve warm with the green crema and lime wedges.

I came up with this by using the Garlic Flatbread recipe by Chris from Kansas, and changing/adding a few things. It is a flatbread pizza fajita style. This was a hit with the kids and the husband! This could be used for an appetizer and cut up smaller and served. Serves 4

Fajita Flatbread Personal Pizzas image

Steps:

  • Start by preparing your meat. Put your thinly sliced beef into a gallon size baggie with your fajita seasoning packet and 2 oz. olive oil. Put in fridge for the afternoon, or as long as you can before you cook.
  • Start out by adding the flatbread ingredients in order into the Bread machine. Select the dough function and wait until it completes.
  • While your dough is in the bread machine, it is a good time to prepare your vegetables. Thinly slice your bell pepper, and onions. Put aside.
  • Then take the dough out onto a floured surface. Roll out into a large square or into a 14 inches circle. Then cut into 4 separate pieces. Put each piece onto a baking sheet. I put two on one. Then cover with a towel in a warm spot for 30 minutes or until doubled in size. Then take the end of a wooden spoon and put divets into each flatbread. Bake at 400 degrees for 15- 20 minute.
  • During the baking of the flatbread, saute your bell peppers, onions and mushrooms in 2 tbsp of olive oil on med. heat. Set aside in serving dish.
  • Now get your meat out of the fridge and saute it in the same pan as the veggies on med heat until no longer pink. Set aside into serving dish.
  • Put your mozzarella cheese into a serving dish as well as your warmed pizza sauce.
  • Serve by starting with everyone having their own flatbread on the plate, then simply make your own pizza. Using the bell peppers, onion, mushrooms, fajita Beef and topping it all off with mozzarella Cheese.
  • Enjoy!
