MEXICAN PIZZA I

Mexican Pizzas are delicious corn tortillas topped with beans, beef and all the delicious taco toppings you can imagine! They can be cut into wedges and served as an appetizer or left whole and served as a main dish.

Steps:

  • Heat the refried beans.
  • In a large skillet, brown the ground beef. Stir in the seasoning packet.
  • Preheat oven to 350 degrees F (175 degrees C).
  • Place a small amount of vegetable oil in a large skillet. Let the oil heat, then place one corn tortilla in the skillet. After 15 seconds, flip the tortilla over and let it fry another 15 seconds. Repeat this process with the remaining tortillas, letting them drain on paper towels once they have been heated. When the tortillas have drained, arrange them on a cookie sheet.
  • Spread a thin layer of beans on the tortillas, followed by a layer of beef, and cheese.
  • Bake the tortillas in the preheated oven for 20 to 30 minutes. Slice the tortillas into wedges and arrange them on plates or a serving platter and garnish them with the sour cream, tomatoes, green onions, chiles, avocado, and olives.

Steps:

  • Adjust oven rack to lowest position, and heat oven to 450 degrees. Mix beans and 1/2 cup salsa in a medium bowl. Place crust on a cookie sheet, then spread the bean mixture over crust. Bake until it's crisp and warm, about 10 minutes.
  • Remove from oven; top with lettuce, green onions and dollop with the remaining salsa. Drizzle (or, if dressing has an easy-pour top, squirt) dressing over pizza. Top with chips and cheese, then return to oven and bake until the cheese melts, about 2 minutes longer. Cut into 6 slices and serve.

Make your own Mexican Pizza image

Steps:

  • Preheat oven to 400F degrees.
  • Pull out a cookie sheet and lay out four tortillas.
  • use 1/4 cup cheese on each and top with another tortilla.
  • Evenly distribute the salsa and top with whatever toppings you like, and top with the remaining cheese, reserving the sour cream, guac and cilantro for when the pizzas come out of the oven.
  • Bake for about 15-20 minutes, until hot and bubbly.
  • Serve with refried beans, cactus salad and Mexican fruit salad.

  • Heat a small nonstick skillet over medium. If using corn flour, lightly dredge 1 tortilla at a time in corn flour, and dust off any excess.
  • Add 1/2 teaspoon of the oil to skillet, and add a tortilla; cook, turning often, until lightly golden and crisp, about 4 minutes. Set aside on metal rack or paper towels. Repeat with remaining tortillas.
  • Stir together taco sauce and enchilada sauce in a small bowl; set aside. Combine cheeses in another bowl; set aside.
  • Preheat oven to broil. Spread about 3 tablespoons beans on 1 tortilla; add about 2 tablespoons taco meat. Top with a second tortilla; spread 2 tablespoons sauce mixture evenly over top tortilla, and sprinkle with 1/4 cup of the cheese. Top with 1 tablespoon each of tomatoes and olives. Place on a rimmed baking sheet. Repeat building process with remaining ingredients to make 6 pizzas. Place baking sheet in center of oven, and broil 1 to 2 minutes until cheese is melted. Let stand 3 minutes before cutting into quarters.
