SINGAPORE LAKSA RECIPE BY TASTY

Singapore Laksa Recipe by Tasty image

Steps:

  • Remove the heads and shells from prawns and set aside in a bowl, then devein and set the prawn meat aside in a separate bowl.
  • To make the prawn stock, add cooking oil to a large saucepan on medium-high heat. Add prawn heads and shells then stir for 5 minutes, crushing the heads to release the flavour.
  • Add water and chicken stock, then simmer for 45 minutes allowing the stock to reduce.
  • Remove prawn shells then strain the broth into a bowl through a sieve.
  • In a food processor, add dried chilli, red chilli, dried shrimp, shrimp paste (belacan), garlic, shallot, ginger, blue ginger (galangal), turmeric root, candle nuts and lemongrass stalk, then pulse for 5 minutes until a thick paste forms.
  • Add cooking oil to a large saucepan then add the laksa paste and cook for 5 minutes until fragrant. Add palm sugar, fish sauce, coconut milk and prawn stock stirring to combine. Simmer the mixture for 15 minutes then add the prawns and tofu puffs, cooking for 3 minutes to finish.
  • To serve, add vermicelli noodles to a bowl then top with bean sprouts, cockles and slices of fish cake. Ladle in scoops of the laksa making sure to include tofu puffs and prawns. Top with a handful of finely chopped laksa leaves and optional chilli paste.
  • Enjoy!

8 king prawns, de-shelled
1 tablespoon palm sugar
1 tablespoon fish sauce
1 ¼ cups coconut milk
¼ lb tofu puffs, tau pok, halved
2 tablespoons cooking oil
8 king prawns, head and shells
5 cups water
2 cups chicken stock
2 tablespoons cooking oil
15 dried chillies
2 red chillis
3 tablespoons dried shrimp, soaked
1 teaspoon shrimp paste, belacan
8 cloves garlic
1 shallot
1 ginger, 1 in (2.5 cm)
1 blue ginger, galangal - 1in (2.5 cm)
turmeric root, 2 in (5 cm)
¼ cup candle nuts
1 stalk lemongrass
2 cups vermicelli rice noodle, cooked
1 cup bean sprout, blanched
1 fish cake, sliced, heated
8 cockles
1 bunch laksa leaves
2 tablespoons chilli paste

MALAYSIAN CURRIED PRAWNS

The amount of curry paste in this recipe does not overpower the flavor of the prawns and the coconut milk gives the sauce a richness. I have put that this serves 4 but it depends on how large the prawns are and how much you love prawns. You can also serve this as an appetizer, with the rice and on a plate--then it would serve 8.

Malaysian Curried Prawns image

Steps:

  • Melt 1 tbsp butter in a saucepan.
  • Add onion and sauté until transparent.
  • Add garlic and sauté for 1-2 minutes.
  • Add flour and stir until fully incorporated, add ketchup, stir.
  • Add coconut milk slowly, stirring constantly, use a whisk so there are no lumps.
  • Add wine and curry paste and tomatoes.
  • Stir and simmer 10-15 minutes.
  • While the sauce is simmering melt the second tbsp of butter in a skillet and add prawns, sauté until they are deep pink (do not overcook prawns).
  • Add sauce and serve at once over rice or noodles.

24 large prawns, peeled & deveined
1/2 onion
4 garlic cloves, crushed
4 tablespoons dry white wine (or vermouth)
1 tablespoon curry paste
1/4 cup tomatoes, peeled, seeded & chopped (you may use canned but drain them well)

1 (400 ml) can coconut milk (or use coconut milk powder and mix just over 1 cup)

This delicious, mild curry is so easy to make. The word 'malai' means cream, but this curry gets its creaminess from coconut milk. This is a recipe from Bengal, which is famous for its seafood. Serve it with steamed basmati rice.

Prawn Malai Curry image

Steps:

  • Prepare the fresh garam masala: in a coffee grinder, grind the cardamom seeds, 3 whole cloves, and 3 cinnamon sticks to a fine powder. Set aside.
  • Heat the vegetable oil in a skillet over medium heat. Add the 4 whole cloves, 4 cardamom pods, and 2 sticks of cinnamon and fry for a few seconds (take care as cloves tend to pop out of the pan). Stir in the grated onion and reduce the heat to medium-low. Cook and stir until the liquid dries and the onion no longer smells raw, about 5 minutes. Add the ginger paste and garlic paste and cook for 2 minutes, stirring constantly.
  • Stir in the turmeric and cayenne pepper. Add the chopped tomatoes and cook until the tomatoes are soft, about 5 minutes. Pour in the water, cover the pan, and cook for an additional 5 minutes.
  • Pour in the coconut milk and stir well. When the mixture is just below boiling, stir in the prawns. Sprinkle the mixture with almost all of the fresh garam masala powder, reserving a pinch to use as a garnish. Gently stir to combine. Do not cover the pan at this stage, as the coconut milk will curdle.
  • As soon as the prawns are pink and cooked through, 3 to 5 minutes, add the ghee. Remove the pan from the heat. Sprinkle the reserved garam masala over the dish and serve.

Steps:

  • Heat the oil in a large pan or wok. When hot, throw in the garlic, spring onion, ginger and green chilli. Cook on a medium heat for 3-4 mins, then squeeze in your lime juice.
  • Stir in the prawns, then add in the coconut milk and stock. Simmer gently for 5 mins on a low heat until the prawns are pink.
  • Meanwhile, cook your egg noodles in a pan of boiling water for 4 mins until soft. Drain, then tip into the laksa pan. Season to taste, then serve in a bowl, topped with coriander.

  • In a large heavy bottom soup pot or dutch oven, heat oil over medium-high heat. Add all the homemade Laksa Paste (or the 7-ounce Jar), and saute, stirring constantly until it becomes very fragrant and deep in color about 2-3 minutes. (Turn stove fan on). Add the chicken broth scraping up all the brown bits. Add the lime leaves, salt and sugar and bring to a simmer.
  • Add chicken and simmer 4-5 minutes. Add shrimp, cook for 2-3 minutes, add coconut milk. Simmer until heated through. Do not boil this too long or you will loose the lovely sweetness from the coconut milk– just gently warm.

  • Preheat your oven to 400 degrees F. Season the chicken thighs with salt and pepper (we used white pepper, but you can also use black pepper), and place on a baking sheet lined with parchment paper. Bake in the oven for 40 minutes. Remove from the oven and set aside.
