These peas are delicious served on toast! You could make this using half and half cream or 18% table cream although it will not be a creamy. If you are using water, then you might want to add in 1-2 teaspoons chicken bouillon powder to the water when boiling but that is optional. This complete recipe may be doubled.

Steps:
- In a medium saucepan combine the peas with chicken broth or water; and garlic powder (if using) bring to a simmer then add in butter (do not drain the broth or water).
- In a small bowl whisk together whipping cream with flour and sugar until smooth then add to the peas; cook stirring over medium-high heat stirring/whisking constantly until thick and bubbly (about 4 minutes).
- Mix in Parmesan cheese (if using) then season with salt and pepper to taste.

my grandma used to make these all the time. my youngest son just loves them! try to keep the pea liquid and half and half equal. you may need to use a little more or less half and half. you can wisk in a little bit of flour to thicken them to your desired consistency. can use whole milk instead of half and half but won't be as creamy.

MAMA'S CREAMED PEAS FOR SICK TUMMIES
When I was a little girl and I would get sick, my Mama (Mary in LA) would always serve me Creamed Peas on Toast. It was light enough for an upset tummy but filling enough to make a sick little girl not be hungry anymore. I never could make it like Mama could until now. I finally figured out where the recipe came from! It is from a book called "The Culinary Arts Institute Encyclopedia of Cooking and Homemaking" which was published in 1940. I decide to post this recipe as a tribute to my Mama. Now all mommies can help their daughters sick tummies feel better just like mine did all those years ago. Thanks Mama!

- In a medium saucepan, over medium heat, add butter. When it's melted and starts sizzling, add shallots and quickly sauté them for 1 minute or until soft.
- Add pressed garlic and sauté for only 30 seconds. Add flour and whisk continuously for 2 minutes to remove the raw taste from it - this will also help to thicken the sauce.
- Slowly pour in half-and-half and continue whisking for a couple of minutes as well or until the mixture is fairly smooth. Pour in the chicken broth and keep whisking.
- As the sauce starts to thicken slowly, add sugar, fresh chopped thyme, sea salt and white pepper. Continue whisking for another minute or so or until the sauce has a beautiful consistency without turning into a thick gravy.
- Add the peas and stir until everything is well blended, reduce the heat to medium low and medium, and cook for 5 minutes, enough to warm up the peas. When the time is up, taste and adjust if necessary and serve immediately.
