MAMA'S SKILLET CORN

Mama used to make this as soon as the fresh corn came in. It is similar to creamed corn in sweetness but the kernels are left whole. A great summertime dish. When my boys whine enough in the winter I will make this with frozen corn.

MAMA'S FRIED CORN

Just a fun twist to your everyday frozen corn. I serve up a dish of vegetables with every dinner. Living in Ohio, we don't have "fresh" vegetables available all year round. We have a garden, and grow a lot of our vegetables in the summer. I then freeze or can as much as I can to get us through to next season. What I don't grow,...

Steps:

  • 1. Steam corn until cooked. Corn will be hot, but firm, not soft.
  • 2. In medium skillet, add butter and melt over medium heat. Add diced onions, steamed corn, and roasted garlic, & Italian seasoning. Cook until onions are transparent, and corn is just lightly brown.
  • 3. Serve with your favorite dinner. Even goes well as a side dish to a pot luck!

16 oz corn kernels, fresh (or frozen)
2 clove garlic, roasted
1 large onions, vidalia, diced
1 Tbsp italian seasoning
2 Tbsp butter

MAMA'S FRIED CORN (CREAM STYLE CORN)

My mother made this for us in the early morning for breakfast before we went to work in the fields at 6:00 AM. She would also make a large pan of Biscuits and fried pork Chops if we had them to go with it. We would go into the field pull & shuck the corn so she could cook it very early, to keep us going till lunch at noon. If...

MAMAWS FRIED CORN

My grandmother made this corn for me as it was my favorite. She never measured anything so I don't know measurements. She passed away in 1972. She never wrote recipes down and I sure wish she had done that. I miss her so much.

  • Cut the kernels from the corn cobs and place the kernels in a large bowl. Run the back of your knife down the corn cobs to scrape off any corn milk; add the corn milk to the bowl with the kernels. Set aside.
  • Fry the bacon in a large, deep skillet or Dutch oven over medium-high heat until crispy, about 5 minutes. Use a slotted spoon to remove the bacon to a paper towel-lined plate, reserving the drippings in the pan.
  • Add the butter to the pan and melt over medium-high heat. Add onions and sauté until soft, about 5 minutes. Add the corn kernels with the corn milk and the water, reduce heat to medium, and cook for 15-20 minutes. Stir the pan frequently, since the corn scorches easily. Season with salt, pepper and sugar. Cook for 2 more minutes. Stir in fresh herbs, top with crispy bacon, and serve!

  • With your corn shucked and cleaned, place it standing up in a large bowl or pan in your sink. (Cutting corn off the cob is quite a task and a messy one at that. I think it’s best to do it in the sink. You’ll thank me later when it’s time to clean up.) Run a sharp knife down the cob cutting the kernels off.
  • Next, we’re going to scrape all the starch and “goody” out of the remaining kernels. This is what gives fried corn it’s unique texture and flavor. Simply turn the back of your knife nearly perpendicular to the cob and scrape down the sides.
  • Heat a skillet (preferably cast iron – I always use my great-grandmother’s – it’s one of my most prized possessions – it’s second to be grabbed in case of a fire after my kid) over medium heat and add bacon grease and two tablespoons of butter (or 4 tablespoons of butter if you’re not using the bacon grease – but you should use the bacon grease). Once melted, add corn. Salt and pepper to taste.
  • Reduce the heat to medium low and stir frequently, cooking for 20 to 30 minutes - or until it's cooked to your liking. Immediately before removing from heat, add remaining butter and stir until melted.
