MAMA'S TEXAS-STYLE PEACH COBBLER

This is very traditional southern comfort food always cooked in a big bowl. My grandmother passed down her 'cobbler bowl' to me that she got from her grandmother.

MAMA'S BLACKBERRY COBBLER

Alabama has some tasty fresh blackberries. Decades ago, my mama was heading out to pick blackberries to make a cobbler, but she ended up going to the hospital to have me instead. This is her mama's recipe. The blackberries start on top, but then end up tucked under a golden brown crust after it's baked. -Lisa Allen, Joppa, Alabama

MAMA'S SOUTHERN BLACKBERRY (OR ANY FRUIT) COBBLER

As southern as they come! Just smelling it makes a person talk with a southern drawl! This is my mama's own old fashioned cobbler recipe. My dad and my husband call it "This Ain't No Lazy Woman's Cobbler" (referring to those easy dump in kind), but you won't find one that tastes better! Honestly, it's not difficult even though...

Steps:

  • 1. Mix flour and salt. Using pastry cutter, cut shortening into flour. Once it becomes a meal texture, add the milk and stir together.
  • 2. Mix fruit, 1 1/2 cups sugar, and 1 1/2 cups water in saucepan and bring to boil. Turn down to simmer while you roll some dough into dumplings.
  • 3. Begin with about 1/4 of the dough. On floured surface, roll dough to about 1/4 inch thickness (or less). Cut into 1-inch pieces and drop into berry mixture. Allow to cook a minute before stirring down and adding more dumplings. You may need just a bit more of the original dough for dumplings. Once it has a good mixture of dumplings and juice, remove from heat. You want this to still be a little juicy. Please remember that your bottom crust will absorb some of the juice.
  • 4. Split the remaining dough into near halves. If one side has slightly more, save it for last. Roll out first half. Spray Pam into bottom of glass 13 X 9 pan. Place rolled out crust into bottom of pan. (Don't cover sides.) If crust tears, it's okay, you can piece it together for the bottom of the dish.
  • 5. Pour berry mixture on top of bottom crust.
  • 6. I usually roll out all of my dough on wax paper, but for this step, I always do. Roll out the remaining dough into a rectangular shape larger than the 13 X 9 dish on floured wax paper. When it's large enough, use the wax paper to turn the top crust onto the cobbler. If an area tears, you can tear off some of the extra to cover the tear. If some areas go beyond the dish, work them into the dish. The top crust is yummy, flaky goodness, and extra is always a good thing.
  • 7. Cut up the butter and spread out pieces all over the top crust. Sprinkle with sugar and cinnamon or nutmeg.
  • 8. Bake at 350 degree oven for 30-35 minutes or until nicely browned. This is delicious served with real whipped cream or vanilla ice cream or just by itself.

4 c fresh blackberries
1 1/2 c water (you may need less if your berries or other fruit are really juicy. mine are home grown, and we've had a drought for a few years.)
1 1/2 c sugar (adjust sugar when changing fruit.)
1/2 tsp cinnamon (optional) (i don't always use it for blackberry.)
DOUGH
3 1/4 c all purpose flour
3/4 tsp salt
1 1/2 c crisco or lard (when i was a child, she used lard.)
1 1/4 c milk
FOR THE TOP CRUST
6-7 Tbsp butter
1/2 c sugar to sprinkle on the top crust
--------- cinnamon or nutmeg to sprinkle on top of crust

MOM'S FRUIT COBBLER

This is the recipe my mom uses on both blueberry cobblers and peach cobblers. I am sure it would work with practically any fruit you wanted to try. When using blueberries, adding a little lemon zest/extract brings out the brightness in the flavors. When using peaches, adding some cinnamon pairs nicely. You may find adding a bit more self-rising flour to the sugar mixture in step #3 will help if you have runny cobbler

Steps:

  • Directions for Filling:.
  • Prepare fruit. Put prepared fruit into 8" x 8" baking dish. Combine sugar and cornstarch. Sprinkle over fruit.
  • Directions for Crust:.
  • In a medium bowl, mix butter and sugar. In a seperate small bowl, crack the egg into it and beat it slightly. Stir the egg into the butter and sugar mixture. Gradually add flour and mix well. The mixture will have a consistency between that of heavy cake batter and light biscuit dough. Drop spoonfuls on top of fruit. The topping will spread out as it cooks. Bake at 325 degrees until light brown and the topping doesn't shake - usually 45-50 minutes. Test the same as you would a cake. Straw should come out clean. When doubled this recipe works well in a 9x13 baking dish. It will take 1 1/2 to 2 hours to bake. Test at 1 hour and 45 minutes.

4 cups fruit
1/2 cup sugar
2 tablespoons cornstarch
1/2 cup softened butter
1 cup sugar
1 egg
1 cup self-rising flour

MAMA'S FRUIT COBBLER

Fast and easy. Very unusual topping made with bread- but you can't tell! Use whatever fruit you would like. My family says this is THE best cobbler EVER! I like it bc it is made with things that I always have on hand and can be thrown together in minutes yet it looks pretty enough to serve company.

Steps:

  • Mix first 4 ingredients together and set aside.
  • Place drained fruit in a buttered 8x8 pan and top with bread strips.
  • Pour sugar mixture over bread and fruit and sprinkle with cinnamon if desired.
  • Bake at 350 degrees for 35-45 minutes or until golden brown.
  • Great topped with ice cream or whipped cream on top.
  • Note: I dont usually measure the fruit, I just fill the bottom of the pan. Frozen fruit that has been partially defrosted works great as does soft fresh fruit- harder fruits such as apples or pears should be precooked until softened for best results. Drained canned fruit works great for this too. One large can (29 oz) is a perfect amount.

GRANDMA'S FRUIT COBBLER

If there were one recipe that I could not live without, this would be it. It's my favorite cobbler recipe that's older than dirt. I suggest using plums, but peaches work just a well.
