MAMA'S BEST GOULASH
My family loves this goulash. It is a dish to feed a large group or two and freezes well. Always better the next day but we normally eat it 1st day too. I hope you enjoy it my way or with your own little twist.

- 1. brown meat with onion in pot or skillet at medium heat
- 2. Add to large skillet or pot-- all seasonings.
- 3. next step is to add all tomato products and water.
- 4. add peas and corn
- 5. add water and macaroni. Cook about 15 minutes.
- 6. Before goulash has cooked for an hour you finish it off with sprinkled cheeses and breadcrumbs on top. The bread crumbs should brown and cheeses have melted.
- 7. You can finish off in oven to brown at 350 for 10 min.

- 1. In a large, deep sided skillet brown the ground beef and the sausage, breaking it up as it cooks. Drain off the grease and lower the heat to medium. Add in the onion and garlic and cook for 5 minutes.
- 2. Stir in the worcestershire, tomato sauce, diced tomatoes with juice and seasonings. Add the broth, water and uncooked elbow macaroni. Stir to combine, cover and cook till noodles are tender, about 7-8 minutes. Turn off the heat, uncover and top with the cheese. Cover back up and let it sit till the cheese is nice and melted.

- 1. Brown ground meat with onion and garlic. Drain excess grease.
- 2. Put all the ingredients except the meat and macaroni into the slow cooker and then stir the meat in (so it doesn't settle on the bottom). Cook on high for at least three hours (or on low for 6 to 8 hours) to allow the flavors to blend.
- 3. A couple of hours before you want to eat stir in the dry macaroni. You CAN put it in at the beginning, but it will grow and grow, especially if you let it cook all day, so if that's your plan, start with really tiny pasta, like tiny elbow mac or stars. I sometimes just cook the pasta in a pan of water and stir it into the goulash 15 or 20 minutes before I serve it. That way, it's done perfectly--isn't mushy or "crunchy." Pasta can be very tricky in a slow-cooker.
- 4. At this point, the goulash should be juicy--almost a soup, so if it starts to get too thick, add some hot water or hot tomato juice.
- 5. None of these amounts or ingredients are critical. Use what you have or what your kids like. Use pinto beans if they don't like kidney beans or leave out the garlic. Leave out the cayenne and turmeric if your family doesn't like the little bit of "heat" they add.
- 6. MY MOTHER'S METHOD (great for throwing together when you get home from work) was to cook the macaroni al dente, brown the meat, then put it all in a kettle on the stove and let it simmer for a couple of hours until dinnertime. The taste isn't quite as mellow, but it's still awfully good, and doesn't require as much advance planning! :D

- Fry hamburger, pepper, and onion in large skillet.
- Drain fat if needed (if you're not sure, you can also only cook the macaroni part way so that while simmering the uncooked pasta will soak up excess moisture when added to the mixture).
- Add remaining ingredients and heat well.
- Add macaroni and heat through.
CLASSIC GOULASH

- Cook and stir the ground beef in a large Dutch oven over medium-high heat, breaking the meat up as it cooks, until the meat is no longer pink and has started to brown, about 10 minutes. Skim off excess fat, and stir in the onions and garlic. Cook and stir the meat mixture until the onions are translucent, about 10 more minutes.
- Stir water, tomato sauce, diced tomatoes, soy sauce, Italian seasoning, bay leaves, and seasoned salt into the meat mixture and bring to a boil over medium heat. Reduce heat to low, cover, and simmer 20 minutes, stirring occasionally.
- Stir macaroni into the mixture, cover, and simmer over low heat until the pasta is tender, about 25 minutes, stirring occasionally. Remove from heat, discard bay leaves, and serve.

MOM SYKES' HUNGARIAN GOULASH

- Melt butter in a large pot over medium heat. Add the stew meat, caraway seeds, onion and paprika. Cook and stir until the meat is browned, and the onions are translucent. Add the garlic and lemon zest, and cook for about a minute, then stir in the tomato paste and beef consomme, adding water if necessary to cover the meat. Cover, and simmer over medium-low heat for 1 1/2 hours.
- Just before the meat is done cooking, bring a large pot of salted water to a boil. Add egg noodles, and cook until tender, about 8 minutes. Drain and serve the goulash spooned over the egg noodles.

- Season beef with salt, pepper, and paprika.
- Brown seasoned beef and onion in oil until all sides are brown. Cover with water and simmer for 3 to 4 hours or until tender. Add water whenever level goes below the ingredients.
