MAMA'S SPAGHETTI WITH MEAT SAUCE
This is adapted from my mom's spaghetti recipe. It's a family favorite that simmers while you prepare the pasta--great for busy nights. Leftovers make a great lunch. I usually serve this over spaghetti, but sometimes I use linguine, fettucine, or penne. Good with garlicky bread and a salad. You can also make the sauce ahead and freeze it (it freezes quite well); just thaw and heat.

Steps:
- Brown beef in a saucepot or large, deep skillet over medium heat; drain.
- Add garlic and saute until just turning white.
- Add onion, celery, and mushrooms. Saute until tender, about 5-7 minutes.
- Add tomatoes with juice and tomato sauce. Stir to combine. Add tomato paste and mix together. Stir in herbs and bay leaves. Season to taste with salt and pepper. Add a pinch of brown sugar, if desired.
- Bring sauce to a simmer; reduce heat and simmer, uncovered, for 15-20 minutes, stirring occasionally. Meanwhile, prepare pasta according to package instructions.
- Before serving, remove bay leaves and taste; adjust seasoning as desired. Serve over hot pasta, sprinkled with Parmesan cheese.
MOM'S SPAGHETTI BOLOGNESE
Recipe passed on from my Italian grandfather. The ultimate comfort food. Leftovers freeze nicely! To make this recipe more authentic, you can use a mixture of ground veal, pork, and beef. You can also substitute the balsamic vinegar for 1/2 cup of red wine.

- Bring a large pot of lightly salted water to a rolling boil. Cook the spaghetti in the boiling water until cooked through yet firm to the bite, about 12 minutes; drain.
- Heat the olive oil in a large pot over medium heat. Cook the bacon in the oil until crisp, 8 to 10 minutes. Stir the onion, celery, carrot, and oregano into the bacon; continue cooking until the vegetables begin to soften, another 8 to 10 minutes. Add the garlic and cook until fragrant, about 2 minutes. Crumble the ground beef into the vegetable mixture; cook and stir until the beef is completely cooked and no longer pink, 8 to 10 minutes.
- Pour the balsamic vinegar over the ground beef mixture; allow to simmer until the liquid evaporates, about 5 minutes. Stir the crushed tomatoes, tomato paste, and sugar into the ground beef mixture; bring the mixture to a boil, season with salt and black pepper, and remove from heat. Stir the fresh basil into the mixture.
- Ladle the sauce over the cooked spaghetti. Top with Parmesan cheese to serve.

SPAGHETTI WITH MY MAMAS MEATBALLS

- Spray a large saucepan with 4 sprays of olive oil spray. Add half the garlic and half the onion and a pinch of red chili flakes and cook over medium heat until tender, about 2 minutes. Add half the chicken stock, tomato puree and diced tomatoes and simmer over low heat for an hour.
- Preheat the broiler. Meanwhile, using the tip of a knife, score the eggplant deeply and sprinkle with salt. Place the eggplant cut-side up and cook under the broiler until lightly browned, about 4 minutes. Remove the eggplant from the broiler and place on a plate and microwave on high until tender, about 2 minutes. Let cool.
- In a large bowl, add the meats and mix gently to incorporate. Place the egg white, remaining chicken stock, onion, garlic and parsley in the beaker of a blender and blend until smooth, about 30 seconds. Add the mixture to the bowl with the meats, add the cheese and crumble the kamut in with your fingers. Sprinkle with salt and chili flakes.
- Scoop the eggplant pulp out of its skin and let any excess water drip off. Measure out 1/2 cup of the pulp, and then lightly chop and add to the meat mixture, folding in to incorporate. With the use of a tablespoon, measure out 16 even heaping mounds on to a clean work surface and then form into balls with your hands.
- Spray a large nonstick saute pan with 4 sprays of olive oil spray and heat over medium-high heat. Once the pan is hot, add half of the meatballs and cook until lightly browned on one side, about 1 minute. Roll the meatballs on the other side and brown evenly, about 2 minutes. Remove the browned meatballs from the pan and then spray the pan with 4 more sprays and repeat the browning with the rest of the meatballs. Add the meatballs to the sauce and simmer very slowly for an hour.
- Meanwhile, bring 4 quarts of water to a simmer and then add 1 tablespoon of salt. Drop the pasta in the water and cook per manufacturer's instructions. Place 4 meatballs each on 4 plates, and then add the spaghetti to the remaining sauce in the pan with 1/2 cup of the pasta water and cook until the sauce holds well on the pasta. Evenly distribute the pasta to each of the 4 plates.

- In a large, heavy stockpot, bronw italian sausage, breaking up as you stir. Add onions and continue to cook stirring occasionally until onions are softened. Add garlic, tomatoes, tomato paste, tomato sauce, and water. Add basil, parsley, brown sugar, salt, crushed red pepper, and black pepper. Stir well and barely bring to a boil. Stir in red wine. Simmer on low, stirring frequently for at least an hour. A longer simmer makes for a better sauce, just be careful not to let it burn! Cook spaghetti according to package directions. Spoon sauce over drained spaghetti noodles and sprinkle with parmesan cheese.

- Preheat oven to 400 degrees F (200 degrees C). Lightly grease a large rimmed baking sheet with olive oil.
- Combine ground beef, bread crumbs, egg, mozzarella cheese, and garlic in a medium bowl. Use a 1/4 cup measure or ice cream scoop to portion into 12 to 13 meatballs. Place on prepared baking sheet.
- Baked until browned and cooked through, about 15 minutes.

MAMA'S SPAGHETTI
Everyone makes spaghetti a little different, but this is the spaghetti I grew up with. It's my favorite!

- Brown Ground Beef, drain.
- In separate pan, saute Onion and Garlic in olive oil.
- Combine Onion and Garlic with Ground Beef in stock pot.
- Salt and Pepper to taste.
- Over medium heat: Add spices and Bay Leaves.
- Add the rest of the Ingredients.
- Add water to taste (I use about a half to a whole can).
- Simmer on low - med for 1 hour, stirring occasionally. Break up whole tomatoes while cooking.
- Serve over your favorite pasta. We typically use vermicelli or angel hair.

MAMA'S CREAMY SPAGHETTI PIE
This is a creamy Spaghetti Pie that I created for my family. It serves 8 people so it's great for larger families.

Steps:
- Heat over to 350 degrees.
- Boil water and cook spaghetti as specified on package.
- Cook beef until done. (Season with Garlic Seasoning as preferred.).
- In a large mixing bowl add 1 cup mozzarella cheese, half of the Romano cheese, 3/4 of the Parmesan cheese, Ricotta cheese, and eggs. Mix together throughly. (Season with Garlic Seasoning as preferred.).
- Drain spaghetti and add to large mixing bowl.
- Mix spaghetti and cheese mixture throughly.
- Grease a large cooking pan and add spaghetti cheese mixture.
- Spread mixture to coat bottom.
- Spread ground beef on top of spaghetti mixture.
- Spread marinara sauce on top of spaghetti/beef mixture.
- Sprinkle additional mozzarella and Romano cheeses on top of mixture.
- Bake for 25 minutes.
- Let sit for 5 minutes to cool.
- Serve to your family sprinkled with left over Parmesan cheese!
MAMMA'S HOMEMADE SPAGHETTI SAUCE
My wife makes this wonderful homemade spaghetti sauce...she found an original in "Quick Cooking 2001" and then made a number of adjustments which have greatly enhanced it and made the recipe her very own...we all over-eat when this comes out...more over, we love to use wild game sausage for the meat...delivers an amazing flavor! ...

- 1. In skillet, cook Italian or wild game sausage (ground beef if you choose) and onion over medium heat until meat is no longer pink; drain (unless using wild game sausage where there will not be any meaningful liquid to drain)
- 2. Transfer to slow cooker (crockpot)
- 3. add the remaining ingredients and stir well to mix. Cover with bay leaves on top.
- 4. cover and cook on low for 7-8 hours. Take lid off slow cooker for the last hour to allow liquid to cook off...
- 5. discard bay leaves and serve over spaghetti/pasta...do not rinse the pasta as you will loose the starch (rinsing of pasta is not recommended)
- 6. We now sprinkle parm cheese on the plate before the pasta as a nice touch and to mop up any liquid separation from the sauce (although there will be none)...and of course parm cheese on top. Enjoy!
