MASHED POTATO-STUFFED MEATLOAF
Forget mashed potatoes as a side dish and reinvent meatloaf with this spud-stuffed version. The potatoes are ready in no time, thanks to your microwave, and could easily become a weeknight go-to recipe all on their own.

- Preheat the oven to 350 degrees F. Line a baking sheet with foil.
- For the mashed potatoes: Poke each potato with a fork several times and microwave until soft, about 15 minutes (or use your microwave?s potato setting). Cool until you are able to handle them with a towel, about 2 minutes. Halve the potatoes and scoop out the flesh with a spoon and discard the skin. Mash the potatoes and butter in a medium bowl until smooth then fold in the sour cream, chives and 1 teaspoon salt until well combined. Set aside.
- For the meatloaf: Toast the bread crumbs in a dry skillet over medium heat until browned and fragrant, about 1 minute. Transfer to a large mixing bowl and set aside. Add the oil, onions, garlic, oregano, 1/2 teaspoon salt and 1/2 teaspoon pepper to the skillet and cook, stirring, until onions are tender, about 8 minutes. Let cool slightly. Add the onion mixture to the bread crumbs along with the meatloaf mix, Parmesan and Worcestershire sauce. Toss and mix gently. Add the eggs and mix it completely into the meat mixture.
- Transfer 1/2 of the meatloaf mixture to the prepared baking sheet and gently press into a 12- by-3-inch rectangle. Gently create a well down the middle of the meatloaf mixture with a 1/2-inch wall on all four sides. Spoon the mashed potato mixture into the well. Working with a quarter of the remaining meatloaf mixture, gently flatten the mixture with the palms of your hands. Lay the meatloaf mixture over 1/2 of the mashed potatoes. Repeat with the remaining meatloaf mixture ensuring the potatoes are completely enclosed.
- For the glaze: Whisk together the ketchup, brown sugar and vinegar in a small bowl. Spoon the glaze evenly over the entire loaf.
- Bake until an instant read thermometer registers 160 degrees F in the center of the loaf, about 45 minutes.
- While the meatloaf is cooking, cook the peas according to package directions. Toss with the butter and season with salt and pepper. Keep warm.
- Slice and serve the meatloaf with butter, black pepper and the peas.
MAMA'S MASHED TATERS
People often ask for my secret to fabulous mashed potatoes, here it is, just like my Mama taught me!

- 1. Put peeled, cubed potatoes into a medium size pot and cover with cold water. Bring the potatoes to boil over medium high heat and let cook about 30 minutes or until fork tender. Drain the potatoes, do not rinse. Put the stick of butter into the hot dry pot and dump the potatoes on top. Mash the potatoes and butter together with a hand masher just until broken up and the butter begins to melt into the potatoes. Add the whipping cream and beat with a electric mixer until there are no lumps and the potatoes are light and fluffy. Add or reduce the amount of whipping cream to make the potatoes the consistency that you like. Add salt and pepper to taste.
- 2. NOTE: I have used all different kinds of potatoes for this recipe and I have found that russet baking potatoes make the best mashed potatoes. Just a suggestion.
POTATO STUFFING
This is an old Pennsylvania Dutch recipe I've always served as a side dish. The simple addition of onion and celery gives the potatoes a special flavor, and the parsley adds color.

MAMAW'S POTATO STUFF
This is absolutely the weirdest recipe I've ever encountered......I got this from my 1st ex-DH, actually from his Mom...I cannot justify it by normal means, but I have to tell you that it is requested by my family on a weekly basis...My ex-MIL was a very young cook when she married and had kids, and I think this was her attempt at some sort of a "Shepherd's Pie" (although upside-down), except that her husband was an insanely picky eater, so she came up with this out of necessity....which turned out to be a favorite of that family. So here it is...It really is quite tasty! It's a "keeper" in my household now. NOTE: I have added a few touches just to add some extra flavor, but the general idea is still there! (The original recipe consisted of ONLY 3 ingredients: green beans, mashed potatoes and ground beef. Period.)

- Brown the ground chuck and saute onions at the same time in a skillet. Drain well.
- Meanwhile, peel and roughly quarter 4-6 potatoes and boil for 20 minutes until fork tender. (I add 1 tablespoons salt to the water.) Drain, and then mash potatoes and add butter, milk, and salt & pepper to taste. Mix well.
- Also, cook the 2 cans of green beans (drained VERY WELL) in 1 tablespoons butter, over medium-low heat.
- In a 2 quart casserole dish, pour all green beans in the bottom and spread evenly. (Salt and pepper to taste.).
- Then spread prepared mashed potatoes on top, sprinkle with paprika and add the cheese.
- Then spread beef mixture on top.
- Bake, covered in a 350 degree oven for about 20-25 minutes, until heated through.

- Boil potatoes until they are tender but firm, do not over cook or the salad will be like mashed potatoes.
- Drain potatoes immediately and let them cool completely.
- Add (to the cooled potatoes) all other ingredients.
- Toss lightly until thoroughly mixed making sure not to mash the potatoes.
- Top the salad with the sliced eggs and sprinkle with Paprika.
- We love it while it's still warm.
- Refrigerate if you like it cold for 2 hours.

MAMAW'S POTATO SALAD
Steps:
- Peel potatoes and put in large pot to boil until soft. Hard boil eggs, rinse in cold water and peel.
- When potatoes are cooled enough to handle, cut into large bite size chunks, put in large bowl. Chop up eggs and put in bowl with potatoes. Add chopped olives and sweet pickle relish. Add mustard, mayo, and salt to taste.
- Mix everything until well blended. If mixture seems dry add more mayo, consistency should be moist.

- In a bowl, combine the potatoes and crumbs; set aside. In a skillet, saute onions in butter until tender; add to potato mixture. I grew up on this recipe, my Grandmother got it from a lady from church at a pot luck a long time ago! She passed it down to my mom and it's always been a family favorite. Quick and easy for school nights, and the leftovers are just as good!
