Steps:
- Place the mango in a food processor and process until smooth. Pass the mixture through a strainer into a bowl.
- Combine the sugar and water in a small saucepan over high heat and cook until dark amber brown. Slowly add the heavy cream and mango puree and whisk until smooth. Transfer to a bowl and let cool slightly.
- Cook's Note: this sauce is great on ice cream, pound cake and angel food cake.
BANANA-CARAMEL NAPOLEONS
These easy and elegant napoleon pastries feature layers of sliced bananas, store-bought dulce de leche, whipped cream, and toasted coconut.

- Preheat oven to 400 degrees. Place puff pastry rectangles on a parchment-lined rimmed baking sheet. Bake until golden and puffed, 15 minutes. Remove and let cool on a wire rack. Meanwhile, in a medium bowl, using an electric mixer, beat cream and sugar on high until stiff peaks form, 2 to 3 minutes.
- With a serrated knife, cut rectangles in half horizontally. Reserve 4 tops. Divide banana slices among 4 pastry bottoms, then drizzle with dulce de leche. Use 2 pastry bottoms and 2 pastry tops to make middle layers. Layer with whipped cream and coconut, then top with reserved pastry tops. Serve immediately.
SPICED APPLE NAPOLEONS WITH POMEGRANATE CARAMEL SAUCE

- Preheat oven to 375°F. Mix 2 tablespoons sugar and 1/4 teaspoon cinnamon in small bowl. Place 1 phyllo sheet on work surface. Brush with half of melted butter. Sprinkle with half of cinnamon sugar. Top with second phyllo sheet. Brush with remaining butter. Sprinkle with remaining cinnamon sugar. Cut phyllo lengthwise in half; place 1 half atop other. Cut phyllo crosswise into 3 squares. Cut each square into 4 triangles for a total of 12 triangles. Place triangles on large baking sheet. Bake until deep golden, about 8 minutes. Cool on sheet.
- Stir 1/2 cup sugar, 3/4 teaspoon cinnamon, 1 cup water and allspice in large saucepan over low heat until sugar dissolves. Increase heat and bring to boil. Add apples; reduce heat and simmer until tender, stirring often, about 15 minutes. Mix in bourbon. Mix cornstarch and 1 tablespoon water in small bowl; add to apple mixture and stir until liquid thickens slightly and mixture boils, about 1 minute. Remove from heat. (Phyllo triangles and apple mixture can be prepared 4 hours ahead. Cover separately. Let stand at room temperature. Rewarm apple mixture over low heat before using.)
- Stir 1/2 cup water and brown sugar in heavy small saucepan over medium heat until sugar dissolves. Increase heat and boil until slightly reduced, about 6 minutes. Add pomegranate molasses and boil until syrupy, about 4 minutes. Cool. Place 1 phyllo triangle on each of 6 plates. Top each with warm apple mixture. Top each with another phyllo triangle. Drizzle pomegranate sauce over.
SALMON AND MANGO NAPOLEON
Steps:
- In a medium bowl, whisk cream until it forms stiff peaks. Add juice of 1 lemon and chives, and mix well. Taste mangoes; if they are very sweet, you may wish to add lemon juice to cream mixture. Season to taste with salt and freshly ground pepper.
- On a cutting board, place one slice of smoked salmon. Using a spatula, spread a thin layer of lemon cream on salmon, covering it completely. Cover cream with slices of mango. Place a second layer of salmon on the mango, and again cover with a layer of cream and a layer of mango. Top with a layer of smoked salmon.
- Cut into four rectangles of equal size, and transfer to four plates. Sprinkle the napoleons with fleur de sel and coarse pepper. Drizzle them with olive oil, and serve immediately.

- Make pastry layers:
- Position 1 rack in top third and 1 rack in bottom third of oven and preheat to 400°F. Roll out 1 pastry sheet on lightly floured surface to 15x12-inch rectangle. Using small sharp knife and long ruler, trim sheet to 13x10-inch rectangle. Cut in half lengthwise, forming two 13x5-inch rectangles. Pierce rectangles all over with fork; transfer to 1 ungreased baking sheet. Repeat with remaining pastry sheet, transferring to another ungreased baking sheet. Brush rectangles with melted butter; sprinkle each with 1 1/2 teaspoons sugar.
- Bake pastries 8 minutes. Reverse position of baking sheets and bake until pastries are golden, about 8 minutes longer. Cool pastries on sheets.
- Make caramel sauce and mousse:
- Pour 3 tablespoons water into ramekin or custard cup. Sprinkle with gelatin; let soften while preparing caramel sauce.
- Combine sugar, corn syrup and 3/4 cup water in heavy large saucepan. Stir over medium-low heat until sugar dissolves, frequently brushing down sides of pan with wet pastry brush. Increase heat; boil without stirring until syrup turns deep golden brown, occasionally brushing down sides of pan with wet pastry brush and swirling pan, about 10 minutes. Remove from heat. Add 1 3/4 cups cream and butter (caramel will bubble up vigorously). Return to low heat; stir until any bits of caramel dissolve.
- Pour 1 1/2 cups caramel sauce into glass measuring cup; set aside pan of caramel sauce. Place ramekin with gelatin mixture in small skillet of simmering water. Stir until gelatin dissolves and mixture is clear, about 1 minute. Mix gelatin into measured 1 1/2 cups hot caramel; cool just to room temperature, stirring occasionally.
- Beat chilled whipping cream in large bowl to medium-firm peaks (do not overbeat). Gradually pour cooled caramel-gelatin mixture over cream, folding constantly but gently. Chill mousse 15 minutes.
- Assembly and final decoration:
- Arrange 3 pastry rectangles on large clean baking sheet; drizzle each with 2 tablespoons caramel from pan. Spread 1 cup mousse evenly over each rectangle. Chill until mousse begins to set, about 1 hour. Reserve plain pastry rectangle.
- Place 1 pastry layer with mousse on small baking sheet or board. Top with second layer, third layer, then plain pastry, aligning layers. Press assembled pastry lightly so that layers will adhere. Cover; chill at least 8 hours and up to 1 day. Cover and chill remaining caramel sauce in pan.
- Using serrated knife, cut pastry crosswise into 6 pieces. Dust napoleons with powdered sugar. Transfer to plates. Rewarm sauce over low heat just until pourable; drizzle sauce onto each plate. Garnish with berries.
