MY BIG FAT GREEK BURGERS

- In a small bowl, stir together the yogurt, oil, lemon juice, garlic, dill, and salt and pepper.
- Heat 2 teaspoons of oil in a nonstick skillet over medium-high heat. Add the onion and cook until soft and translucent, about 3 minutes. Add the spinach and cook until wilted, about 1 minute. Remove the pan from the heat. Add the feta cheese, dill and 1/4 teaspoon black pepper and stir to combine.
- Divide the turkey into 4 equal sized rounds. Make 2 equal sized patties out of each round so you have 8 patties total. Put 2 tablespoons of the spinach-feta mixture onto half of the patties. Top with remaining patties working the turkey around the edges to seal burgers closed. Season the burgers on both sides with the salt and remaining 1/4 teaspoon pepper.
- Spray a nonstick grill pan with cooking spray and heat over medium-high heat, or prepare the grill. Grill the patties until cooked through, about 5 minutes per side.
- To serve, place a burger on the bottom half of each bun, top with about 2 tablespoons of yogurt sauce, then 2 or 3 cucumber slices and a lettuce leaf. Top with the other half of the bun and serve.

- Preheat an outdoor grill for medium heat, and lightly oil the grate.
- Knead together the ground beef, Worcestershire sauce, parsley, salt, and pepper in a bowl. Form the mixture into 8 equal-sized balls; flatten to make thin patties. Place about 1/4 cup of feta cheese onto each of four of the patties. Top each of the patties with cheese with one of the patties without; press the edges together to seal the cheese into the center.
- Cook on the preheated grill until the burgers are cooked to your desired degree of doneness, 7 to 8 minutes per side for well done. An instant-read thermometer inserted into the center should read 160 degrees F (70 degrees C).

- Shape beef evenly into 12 patties.
- In a small bowl, combine the feta cheese, chopped tomato, onion, olives, oil and oregano.
- Top six of the patties with the cheese mixture and then cover with remaining patties and firmly press edges to seal. Sprinkle with salt and pepper for seasoning.
- Grill patties, covered over medium hot heat for 6-8 minutes on each side or until a meat thermometer reads 160F and juices are clear.
- Serve each burger on a pita with lettuce, sliced tomato, cucumber and cucumber ranch dressing.

- To make the burgers: combine the beef, feta, oregano, half of the grated garlic, and black pepper in a large mixing bowl. Use your hands to gently combine the ingredients. Form into four patties that are the same diameter as your rolls — the patties should be slightly thicker at the edges with a slight indentation in the middle. Let the burgers rest while you prepare the tzatziki.
- To prepare the tzatziki: Peel your cucumber and grate it using the coarse side of a box grater (alternately, you can shred it using a vegetable peeler). In a small dish, combine the yogurt, cucumber, 1 remaining garlic, and dill. Season to taste with salt. Cover and refrigerate until ready to serve.
- Grill the burgers over a medium flame for approximately 5 minutes on each side (you can also cook them on the stovetop in a pan set over medium heat) or until they are cooked to your desired level of doneness.

- Combine the ground meat(s), garlic, mint, oregano, salt and pepper in a mixing bowl and knead well. Add 2 to 4 tablespoons of olive oil to the mixture while kneading, to create a soft, succulent mass. The mixture should be dense but slightly unctuous. Cover and refrigerate for 30 minutes to 12 hours. (You can make ahead, the day before.)
- Mash the feta, cayenne or paprika, and lemon juice together in a bowl using a fork, or pulse on and off in a food processor, to form a thick paste. Divide the mixture into 8 eqyal portions, about a tablespoon each, and shape into small balls.
- Right before preparing the burgers, core and cut the tomatoes into 1-inch/2.5-cm cubes, place in a bowl, season lightly with salt and set aside.
- Divide the ground meat mixture into 8 equal parts. Rub the palms of your hands with a little olive oil and shape each portion into a burger. Using your thumb, make an indentation in each burger and fill with the spicy feta ball. Pinch together the meat to seal the indentation, so that the feta is not exposed.

- To prepare this Greek bifteki recipe, add in a large bowl the minced beef along with the rest of the ingredients and mix thoroughly with your hands. If the mixture is too sticky add some more breadcrumbs (or some water if it is to dry), till the mix is solid. If you have the time, it is better to knead the mixture for about 10 minutes, until all the ingredients combine. Alternatively, you can mix it using an electric mixer, with the dough hook at low speed.
- When done, put the mixture for the burgers (bifteki) in the fridge to rest for about 10 minutes, whilst preheating the oven to 200C.
- Knead the mixture in flat round burgers. Place the biftekia on a large baking tray and cook in the oven for 18 minutes, flipping the burgers, mid-through cooking time. Top each bifteki with a slice of tomato and a small block of feta cheese and bake further for 7 minutes.
- Serve the biftekia, while still hot with a drizzle of extra virgin olive oil and sprinkle a pinch of dried oregano. Enjoy!
