- Preheat the oven to 325 degrees F. Line a baking sheet with tin foil.
- Stir together the maple syrup and brown sugar in a small bowl. Arrange the bacon in a single layer on the prepared baking sheet, leaving a slight gap between each slice. With a pastry brush, coat the bacon with the maple syrup mixture.
- Bake until the bacon is crispy and the sugar is caramelized, about 25 minutes. Cool slightly, then carefully loosen the bacon from the foil while still warm. Serve with Tiffani's Spicy Bloody Mary.

- Preheat oven to 350 degrees. Line a 13x9 inch baking pan with parchment paper or lightly spray with cooking spray.
- To prepare the shortbread mix, the flour, 1/4 cup of brown sugar, baking powder, 1 tablespoon maple syrup and salt in a large bowl. Add 1/2 cup of the butter and using a pastry blender or fork, combine the mixture well until it resembles coarse meal. Press the mixture evenly into the bottom of the prepared baking dish. Bake in the preheated oven until lightly browned about 15-20 minutes. Sprinkle the crumbled bacon in an even layer over the shortbread crust.
- To prepare the maple glaze, melt the remaining 1/2 cup of butter over medium heat in a medium sized saucepan. Whisk in the remaining 2 tablespoons of maple syrup, the confectioner's sugar, the remaining brown sugar and the vanilla until smooth. Bring to a boil, stirring constantly. Let boil for one minute.
- Pour the glaze over the bacon and shortbread crust, spreading with a spatula or knife. Allow to cool to room temperature before cutting into squares.
MAPLE-ROASTED BACON

- Preheat the oven to 400 degrees F.
- Place a baking rack on a sheet pan and arrange the bacon in 1 layer on the baking rack. Bake for 15 to 20 minutes, until the bacon begins to brown. Remove the pan carefully from the oven; there will be hot grease in the pan! Brush the bacon slices with maple syrup and bake for another 3 to 5 minutes, until the bacon is a warm golden brown. Transfer the bacon to a plate lined with paper towels and serve warm.

- Beat the margarine, sugar and extract together.
- In a separate bowl, stir the flour and salt together, then beat into the margarine mixture until fluffy.
- Roll into 1-inch balls and place on a sprayed cookie sheet.
- Gently press a pecan half onto each cookie.
- Bake 12 minutes at 350°F; let cool slightly on pans before lifting onto cooling racks.
- Keeps 2 weeks in a covered tin, and freezes well.
- Note: This recipe does not call for eggs.

MAPLE-CANDIED BACON
Steps:
- Preheat oven to 400 degrees F.
- Line a rimmed baking sheet with heavy foil. Place a baking rack over the lined sheet tray and arrange the bacon slices across the rack next to each other, not overlapping.
- In a small bowl, whisk the maple syrup and mustard. Generously spoon over the top of the bacon, and bake 12 to 15 minutes. Turn the bacon over and baste with syrup mixture. Bake an additional 5 to 10 minutes, or until the bacon has reached desired crispiness.
- Carefully remove the pan from the oven. Sprinkle hot bacon with a scant pinch of finely ground black pepper. Let the bacon rest on the rack for 5 minutes.

- Whisk the warm milk, yeast, and sugar together in the bowl of your stand mixer fitted with a dough hook or paddle attachment. Cover and allow to sit for 5 minutes. The mixture should be a little frothy on top after 5 minutes. If not, start over with new yeast.
- Add the eggs, butter, vanilla, nutmeg, salt, and 2 cups (245g) flour. Beat on low speed for 1 minute. Scrape down the sides of the bowl with a rubber spatula as needed. Add remaining flour and beat on medium speed until the dough comes together and pulls away from the sides of the bowl, about 2 minutes. If needed, add more flour, 1 Tablespoon at a time, until the dough pulls away from the sides of the bowl. Don’t add too much flour, though. You want a slightly sticky dough. *If you do not own a mixer, you can mix this dough with a large wooden spoon or rubber spatula. It will take a bit of arm muscle!*
- Keep the dough in the mixer and beat for an additional 2 minutes or knead by hand on a lightly floured surface for 2 minutes.
- Lightly grease a large bowl with oil or nonstick spray. Place the dough in the bowl, turning it to coat all sides in the oil. Cover the bowl with aluminum foil, plastic wrap, or a clean kitchen towel. Allow the dough to rise in a relatively warm environment for 1.5-2 hours or until double in size.
