TANGERINE-MAPLE GLAZED CHICKEN THIGHS AND DRUMSTICKS

Tangerine-Maple Glazed Chicken Thighs and Drumsticks image

Steps:

  • Heat the grill to medium-high.
  • Heat 2 tablespoons of the oil in a medium saucepan over high heat, add the onion and cook until soft, 3 to 4 minutes. Add the juice and thyme, bring to a boil and cook, stirring occasionally, until thickened and reduced to approximately 1/2 cup, 20 to 25 minutes.
  • Strain the mixture into a bowl and whisk in the syrup, soy sauce and black pepper and let cool to room temperature. Can be made 2 days in advance and brought to room temperature before using.
  • Brush chicken on both sides with the remaining oil and season with salt and pepper. Grill until golden brown on both sides and just cooked through. Begin brushing with the glaze during the last 5 minutes of grilling. Remove to a platter and sprinkle with the green onion. Garnish with grilled citrus.

5 tablespoons canola oil
1 small red onion, coarsely chopped
1 quart tangerine juice or tangerine-orange juice, not from concentrate
4 sprigs fresh thyme
1 tangerine or orange, zested
1/4 cup pure maple syrup
1 tablespoon low-sodium soy sauce
1 teaspoon coarsely ground black pepper, plus more for seasoning
8 chicken drumsticks
8 bone-in chicken thighs
Salt
2 green onions, thinly sliced, for garnish
Grilled oranges and tangerines, for garnish

Steps:

  • Bring first 7 ingredients to a boil in a medium saucepan over medium heat. Reduce heat; simmer, stirring often, 6 minutes. Remove 1/4 cup chili sauce mixture; brush evenly on drumsticks. Reserve remaining mixture for basting.
  • Prepare a hot fire by piling up charcoal on one side of grill, leaving other side empty. (For gas grills, light only one side, heating to 400° to 500°.) Arrange drumsticks on food grate on unlit side.
  • Grill drumsticks, covered with grill lid, 1 hour or until chicken is done, turning once and basting with remaining chili sauce mixture every 15 minutes.

Steps:

  • Heat oven to 375°F. Mix all ingredients except chicken. Place chicken in ungreased pan, 15 1/2x10 1/2x1 inch. Pour syrup mixture over chicken; turn chicken to coat.
  • Bake uncovered 45 to 55 minutes, turning once and brushing with sauce after 30 minutes, until juice of chicken is no longer pink when centers of thickest pieces are cut. Serve chicken with sauce.

  • Add chicken drumsticks to a large resealable plastic bag (skin on or off as desired). Combine ½ cup maple syrup, ½ cup chili sauce, ¼ cup apple cider vinegar, 1 tsp minced garlic and salt and pepper as desired. Pour over drumsticks in bag.
  • Seal bag and turn to coat drumsticks. Place in the refrigerator to marinate for 2-8 hours (I marinated mine just a couple hours).
  • Preheat grill to about 400 degrees F (I had 2 sides on, and one side off so I could move them to indirect heat if need be). Either grease the grill with oil or non-stick, or spray a piece of tin foil with non-stick spray and place on the grill over the heat (*see post for additional explanation). Place drumsticks on the grill, and cook, turning every so often, for 20-25 minutes or until meat starts to fall away from the bone. Keep an eye on them so they don't burn! Move to indirect heat if need be.
  • While drumsticks are cooking (or you can do this ahead of time if you need to), combine ¼ cup maple syrup, ¼ cup chili sauce, ⅛ cup apple cider vinegar and ½ tsp minced garlic in a small pot. Bring to a low simmer over medium heat and cook, stirring often, until reduced and thickened (about 10-15 minutes). Turn off heat and keep warm until chicken is done.
