STICKY MAPLE PEPPER GLAZED CHICKEN WINGS
This is one of my favorite appetizers to make over the holidays! The coarse ground pepper cuts the sweetness of the maple syrup by adding just the right amount of heat. These chicken wings are best fresh out of the oven (they are nice and crispy), but they are also delicious if made ahead and kept warm in a slow cooker. -Shannon Dobos, Calgary, Alberta

- Preheat oven to 425°. Line two 15x10x1-in. baking pans with foil and coat with cooking spray; set aside. , Using a sharp knife, cut through the 2 wing joints; discard wing tips. In a shallow bowl, combine flour, baking powder, pepper, salt and garlic powder. Add wing pieces, a few at a time, and toss to coat; shake off excess., Place on prepared baking sheets. Bake until no longer pink, 40-50 minutes, turning once. Meanwhile, in a small saucepan, combine glaze ingredients. Bring to a boil. Reduce heat; simmer until thickened, 5-7 minutes, stirring frequently. Drizzle over wings; toss to coat. If desired, top with chopped green onions.

Some wonderful maple syrup I brought back from my last trip to Vermont inspired my recipe. These wings have been a hit with family and friends. They're very versatile-use them for TV snacks, hors d'oeuvres for parties or showers, or appetizers-or double or triple the recipe and make the wings a main dish you can serve with a salad or corn on the cob on the side. -Janice Henck, Clarkston, Georgia

- Cut chicken wings into three sections; discard wing tip section. In a large resealable plastic bag, combine remaining ingredients. Set aside 1 cup for basting and refrigerate. Add chicken to remaining marinade. Seal bag and turn to coat; refrigerate for 4 hours, turning occasionally., Drain and discard marinade. Moisten a paper towel with cooking oil; using long-handled tongs, lightly coat the grill rack. Grill chicken, covered, over medium heat or broil 4 in. from the heat for 12-16 minutes, turning occasionally. Brush with reserved marinade. Grill or broil, uncovered, for 8-10 minutes or until juices run clear, basting and turning several times.

CHILLI-MAPLE CHICKEN WINGS

- Heat oven to 180C/160C fan/gas 4. Toss the chicken wings in some oil and seasoning in a baking tray. Cook for 30 mins. Combine the butter, hot chilli sauce, sugar and maple syrup in a saucepan with a good pinch of salt, and bubble until thick and glossy. Brush the mixture all over the chicken, then return to the oven for 20 mins - turning and painting halfway through cooking - until sticky. Serve with celery sticks and sour cream for dunking.

MAPLE CHICKEN WINGS
I found this recipe on Food Network. I have not made it yet but wanted to post it so I would have the recipe readily available when the time is right. It sounds like it would be very good. EDITED 2/7/10: I was trying different wing recipes to serve for the Super Bowl this year and realized I had never made this one so I whipped up a batch. It is a "WINNER"! I'm making a triple batch to serve on Super Bowl Sunday.

Steps:
- Preheat oven to 350 degrees.
- Cut off chicken wing tips and snip the skin between the joints.
- Place wings in large disposable baking pan.
- In large bowl combine all remaining ingredients.
- Pour over wings and toss to coat.
- Place pan on baking sheet and bake for approximately 1 hour, turning every 15 to 20 minutes.
- After 1 hour increase oven tempterature to 425 degrees.
- Turn wings to coat evenly and cook an additional 45 minutes.

MAPLE-GLAZED HOT WINGS

- To make the rub, mix together all the ingredients in a large bowl with a large pinch of salt. Add the chicken wings and toss to coat in the spices. If you've got time, chill and marinate for up to 24 hrs.
- Heat oven to 180C/160C fan/gas 4. , transfer the wings to the tray and roast for 40-45 mins until they are cooked through. Turn the oven up to 220C/200C fan/gas 7 and roast for a further 10 mins until golden brown and crispy.
- Meanwhile, make the glaze by heating the butter, vinegar, hot sauce and maple syrup in a small saucepan. Bring to the boil over a high heat, then reduce the heat and simmer gently for 5 mins or until the glaze has thickened. Remove the wings from the oven and while they are still hot, pour over the glaze and carefully mix using a spoon to roll and coat them evenly. They should be nice and glossy. Serve with your favourite dip.

- Heat a saucepan over medium heat and cook the bacon until nearly crisp. Add the garlic and cook until the garlic is lightly browned, 1 to 2 minutes.

- In a large saucepan or deep fryer, heat the oil to about 375°. Fry the chicken wings in small batches until golden brown, 8 to 10 minutes. Shake off any excess oil and place on paper towels to drain. Continue frying the chicken in batches until all of the wings are cooked.
