- Pour milk into a microwave-safe measuring cup; heat in a microwave oven for 1 minute and 30 seconds. Place maple syrup, cocoa powder, and vanilla extract in a mug; pour in 1/3 of the hot milk and stir well. Add remaining hot milk.

Delicious on a cold winter's night! You can make this with either maple or mint extract, or any other flavoring you think might be good. Don't be tempted to leave out the butter, it makes it creamier. This is not a low-fat recipe, but you can risk it on occasion!

- In a large saucepan, combine sugar, cocoa and salt. Stir in hot water and butter; bring to a boil.
- Add the milk, maple (or mint) flavoring, vanilla and 8 marshmallows. Heat through, stirring occasionally, until marshmallows are melted.
- Ladle into mugs and top each with a marshmallow.

- In a medium saucepan, whisk together the cocoa powder and 1 tablespoon maple syrup until the cocoa powder is mostly incorporated. Whisk in the milk.
- Warm the mixture over medium heat, stirring frequently, until it comes to a gentle simmer, about 4 to 7 minutes (don’t let it come to a rolling boil).
- Remove the hot chocolate from the heat and stir in the chopped chocolate and vanilla extract until well blended. Taste (careful, it’s hot), and add more maple syrup if you’d like a sweeter cup. Pour the hot chocolate into two mugs, top with any desired garnishes, and serve while hot.
