This not-too-sweet spread is equally good on low-fat crackers or sliced apples and pears.

It is so good on so many things, from waffles to squash to fresh out of the oven dinner rolls (did the rolls with this butter for Thanksgiving...OMGosh it was such a hit!) The possibilities are endless! Great on cooked carrots, sweet potatoes, parsnips, squash...I even used to baste some...

Maple Honey Butter image

Steps:

  • 1. Place all ingredients into a medium bowl and beat on low until incorporated, then on medium high for 1 1/2 - 2 minutes...you want to make sure your get it whipped together very well or the maple syrup with start to break down the butter. IF this happens to you after a couple days or even more, just re beat it.
  • 2. Store in air tight container in refrigerator. I pop in microwave for 10-15 seconds and stir, if I want it soft.
  • 3. It stores well in refrigerator up to a month, well, that's the longest I've ever had it last until it was gone, so it might be good longer, but I don't know. lol

1 1/2 c butter, softened
1/2 c pure maple syrup
1/2 c honey
1 c powdered sugar
1 tsp cinnamon, optional

Maple Nut Brittle image

Steps:

  • Line a baking sheet with aluminum foil; spray lightly with cooking spray. Reserve 2 tablespoons of almonds and sprinkle the rest evenly over the foil.
  • Combine brown sugar and maple syrup in a 2-quart saucepan over medium heat. Cook and stir until sugar is dissolved and caramel mixture comes to a full boil, about 10 minutes.
  • Preheat oven to 350 degrees F (175 degrees C).
  • Turn oven off once preheated; place prepared baking sheet in the oven to warm.
  • Attach a candy thermometer to the saucepan with the caramel mixture. Add butter. Cook, stirring occasionally, until the mixture reaches 300 degrees F (149 degrees C) or until a small amount dropped into ice water forms a hard, brittle strand, about 20 minutes.
  • Remove baking sheet from the oven and immediately pour the caramel mixture over the almonds. Spread evenly to about 1/4-inch thickness. Sprinkle remaining almonds and chocolate chips over open spaces. Spread chocolate evenly once melted. Let brittle cool completely, at least 30 minutes. Break into pieces.

Steps:

  • Preheat a dry skillet over a medium-high heat. Add the walnuts, maple syrup and salt. Cook, stirring frequently, until syrup is caramelized and nuts are toasted, about 3 minutes. Let cool.

Steps:

  • In a small saucepan, combine milk and butter. Cook and stir over low heat until butter is melted. Place the confectioners' sugar in a large bowl; add milk mixture and beat until smooth. Stir in the walnuts, maple flavoring and vanilla. Roll into 3/4-in. balls; place on waxed paper-lined baking sheets. Refrigerate until firm, about 1 hour., In a microwave, melt the chips, bittersweet chocolate and shortening; stir until smooth. Dip balls into chocolate; allow excess to drip off. Place on waxed paper; let stand until set. Store in an airtight container.

Steps:

  • Preheat oven to 375 degrees. Melt butter in large skillet over medium heat. Stir in maple syrup, vanilla, cinnamon, and 3/4 teaspoon salt. Bring to a simmer (mixture should be frothy), about 3 minutes. Add walnuts, and toss to coat using a rubber spatula. Cook, stirring, until sauce is syrupy and bubbly, about 3 minutes.
  • Transfer walnut mixture to a parchment-lined baking sheet, and spread into a single layer. Bake until walnuts are caramelized, about 10 minutes. Transfer sheet to a wire rack. Stir, and let stand until cool and hardened, about 30 minutes.

  • Preheat oven to 350 and grease an 8x8 inch baking dish. In a large bowl cream together melted butter and brown sugar. Add vanilla and eggs and mix well.
  • In a medium bowl whisk flour, baking powder, baking soda, and salt. Add dry ingredients to wet ingredients and mix until combined. Stir in nuts and chocolate chips. Spread into prepared dish and bake for 20-30 minutes until a toothpick inserted into the middle comes out mostly clean.
  • While the blondies are baking, prepare the sauce. Combine butter, sugar, cream cheese, maple syrup, and brown sugar in a medium sauce pan and stir over medium heat until cream cheese and sugars are melted. Simmer for 10-15 minutes until ready to serve. (If needed, thin out with a bit of milk or heavy cream)
  • Serve blondies warm and top with ice cream and cream sauce. Optional: sprinkle with chopped walnuts or pecans.
