MUSTARD, MAPLE, AND WALNUT SAUCE WITH GRILLED CHICKEN

This is a tangy, sweet sauce to pour over your chicken after it's done.

Mustard, Maple, and Walnut Sauce with Grilled Chicken image

Steps:

  • In a small bowl, mix together mustard, walnuts, maple syrup, vinegar, and thyme; season with salt and pepper.
  • For the chicken, heat the grill to medium and lightly oil grates. Season the chicken with salt and pepper. Place, skin side down, on grill. Cover and grill, turning once, until cooked through, 25 to 30 minutes. If desired, remove skin and bones, and slice before serving.

1/4 cup Dijon mustard
1/4 cup walnuts, coarsely chopped
3 tablespoons pure maple syrup
1 tablespoon red-wine vinegar
1 teaspoon dried thyme leaves
Coarse salt and ground pepper (for sauce and chicken)
4 bone-in, skin-on chicken breast halves (10 to 12 ounces each)

Steps:

  • 1. Put all but the nuts in a sauce pan and bring to a boil. Reduce heat and simmer for 15 minutes or until it thinkens. add the nuts, stir and pour into clean hot 1/2 pint jars. adjust lids and Process in boiling water bath for ten minutes. Take out allow to cool. Check lids and label
  • 2. To make one pint of syrup simply cut the recipe in half 3/4 cup light corn syrup 1/4 cup each water and brown sugar 1/2 tsp maple flavoring 1/2 cup maple syrup

1 c maple syrup
1/2 c water
1/2 c sugar (I used dark brown sugar)
2 c small walnut pieces
1 tsp maple flavoring optional

Vanilla Ice Cream with Maple-Walnut Sauce image

Steps:

  • Simmer maple syrup and salt in heavy medium saucepan over medium heat until slightly thickened, about 5 minutes (do not stir). Add 1/2 cup ice cream and whisk until smooth, about 1 minute. Stir in walnuts. (Can be made 4 hours ahead. Cover and chill. Rewarm over low heat, stirring often.) Scoop remaining ice cream into bowls. Spoon sauce over and serve.
