MAPLE-WHIPPED SWEET POTATOES
Often the most favorite holiday side dishes are the simplest. This recipe combines roasted sweet potatoes with butter and maple syrup in the food processor with very little effort.

- Preheat oven to 400 degrees. Prick sweet potatoes all over with a fork. Place on a rimmed baking sheet. Bake until very tender when pierced with a knife, 1 hour. When cool enough to handle, halve sweet potatoes. With a spoon, scoop out flesh (discard skins); transfer to a food processor. Add butter and syrup; process until smooth. Season with salt and pepper. Serve warm.

MAPLE ROASTED SWEET POTATOES
Steps:
- Preheat the oven to 400 degrees F.
- In a large bowl add the sweet potatoes, 2 tablespoons of the maple syrup, 2 tablespoons of the olive oil, 2 teaspoons salt and 1 teaspoon pepper. Mix to evenly coat the potatoes and arrange on a sheet tray. Roast until caramelized, golden brown and soft, about 20 to 30 minutes. Be sure to check them after 15 minutes and stir, if needed.
- Meanwhile, in a large skillet over medium-low heat, add the remaining 2 tablespoons of olive oil and the sliced shallots and saute until they start to caramelize, about 5 minutes Add the remaining 2 tablespoons of maple syrup and balsamic vinegar. Season with salt and pepper, to taste. Lower heat to medium and cook until golden brown and caramelized, about 5 minutes. Add water, 1 tablespoon at a time, if the pan becomes dry.
- Add the roasted sweet potato cubes to the caramelized shallots and transfer to a warm serving dish.
MAPLE WHIPPED SWEET POTATOES WITH CARAMELIZED ONIO
Here's one spot where technique really makes a difference. Cook the onion until deep Brown and caramelized. It adds another layer of complex sweetness that differs from the Maple syrup. If you have some grated pecorino Romano it will make the puree richer and give it a nutty undertone.

- 1. preheat the oven to 375°.
- 2. Put the sweet potatoes, 1/4 cup Maple syrup, 2 tablespoons olive oil, 2 teaspoons salt and 1 teaspoon pepper in a large mixing bowl. Toss to evenly coat and transfer to a baking sheet. Roast in the oven until the sweet potatoes are soft, 35 to 40 minutes. Check on them after 15 minutes and stir, if needed.
- 3. Meanwhile, melt the butter and 2 tablespoons of olive oil together in a large skillet over medium-high heat. Add the sliced onions and 2 tablespoons maple syrup and season with salt and pepper to taste. Cook, stirring frequently, until the onion is deep Golden Brown, about 10 minutes, adding water, a tablespoon at a time, if the skillet gets too dry. Remove from the heat and set aside.
- 4. Transfer the sweet potatoes to a food processor and add a tablespoon of hot water. Pulse until just blended and then add half the caramelized onion. Pulse a few more seconds to incorporate the onion. For a very smooth puree, add another tablespoon of water and run the machine for one minute. Fold in the remaining caramelized onion, reserving some for garnish. Serve in warm dish and garnish with reserved caramelized onion. Serves four
MAPLE-WHIPPED SWEET POTATOES
Steps:
- Preheat oven to 375 degrees.
- Pierce the potatoes with a fork or knife. Bake for 45 to 50 minutes, until soft. Let cool slightly.
- When the potatoes are cool enough to handle, cut them in half and scoop the potato pulp into a bowl. Add the butter, sour cream and maple syrup. Using a potato masher or sturdy whisk, mash or beat the potatoes until smooth. Season to taste with salt and pepper.
- Transfer to a covered casserole and keep warm until ready to serve.

MAPLE SWEET POTATO PUREE WITH CARAMELIZED ONIONS

- Preheat oven to 375 degrees F.
- Place sweet potatoes, 1/4 cup of the maple syrup, 2 tablespoons of the olive oil, 2 teaspoons salt and 1 teaspoon pepper in a large mixing bowl. Toss to evenly coat and place on sheet tray. Roast in the preheated oven for 35 to 40 minutes or until sweet potatoes are soft. Be sure to check on them after 15 minutes and stir, if needed.
- Meanwhile, in a medium saucepan over medium-high heat, melt butter and add remaining 2 tablespoons of olive oil. Add the sliced onion, 2 tablespoons of maple syrup and season with salt and pepper, to taste. Saute until deep golden brown, about 2 minutes. Remove from the heat and set aside. Add water, 1 tablespoon at a time, if the pan becomes dry.
- Transfer sweet potato mixture to a food processor, (may need to be done in batches) and add about a tablespoon of hot water. Pulse until just blended and then add half the caramelized onions. Pulse just a few times until desired consistency, adding more hot water for a smoother puree. Fold in remaining caramelized onions, reserving some for garnish.
- Serve in a warm dish and garnish with the reserved caramelized onions. YUMMY!!!
SWEET POTATOES WITH CARAMELIZED ONIONS
Baked sweet potatoes are topped with slow cooked caramelized onions and red bell peppers. Serve with a dollop of sour cream or plain yogurt. Use large sweet potatoes for a delicious meatless main dish.

- Preheat an oven to 450 degrees F (230 degrees C). Scrub and dry the sweet potatoes, then prick several times with a fork and place onto a baking sheet. Bake in the preheated oven until the sweet potatoes are easily pierced with a fork, 50 minutes to 1 hour.
- Heat the oil in a large skillet over medium heat. Stir in the onion and bell pepper; cook and stir until the onion has softened and turned translucent, about 5 minutes. Reduce heat to medium-low, and continue cooking and stirring until the onion is very tender and dark brown, 20 to 30 minutes more.
- Split open the baked sweet potatoes and top with the onion mixture, salt, pepper, and a dollop of sour cream.

MASHED SWEET POTATOES WITH CARAMELIZED ONION AND PANCETTA
I thought I had Thanksgiving all figured out until I ran into this recipe. More savory than sweet it might be just the thing to complete that turkey dinner!

Steps:
- Boil sweet potatoes in large saucepan of boiling salted water over medium-high heat 15-20 minutes or until very tender.
- Drain sweet potatoes; return to saucepan.
- Meanwhile, heat oil in large skillet over medium heat until hot.
- Add pancetta; cook 2-3 minutes or until pancetta begins to brown.
- Add onion; cook 15-20 minutes or until onions are caramelized, stirring frequently.
- Adjust heat, if necessary, to prevent onions from browning too quickly.
- Add vinegar; stir, scraping up browned bits from bottom of skillet.
- Over very low heat, mash sweet potatoes.
- Add mascarpone, salt and pepper.
- Stir in onion mixture.
- *Noteyou can use bacon if you don't have pancetta available.
- Just cook the bacon in a medium pot of boiling water 1 minute.
- Drain and rinse until cool.
- Blanching helps remove some of the smoky flavor from the bacon.
SWEET POTATOES WITH CARAMELIZED ONION
I fail to remember where this recipe first appeared but chances are it was from Canadian Living magazine. This simple dish is much richer than you would expect and pairs well with grilled meats especially lamb and pork. Since sweet potatoes are very moist, adjust the amount of sour cream or milk to your taste. I do recall that the original recipe recommended placing the sweet potatoes and onion mixture in a food processor until blended. I found this method too gluey and altered it as stated.

- Preheat oven to 400º.
- Heat olive oil in frying pan at medium heat and add onion. Sauté until rings separate. Reduce heat to medium low and continue cooking uncovered, until onions are soft and caramelized at least 30 minutes or more, stirring occasionally.
- Meanwhile, prick whole potatoes with skins on and bake in roasting pan for 40 minutes or until soft. When cool enough to handle peel skins from potatoes and set aside.
- When onions are soft add thyme, salt and pepper to taste and mix well. At this point you can either place the onions in a food processor and pulse until they are slightly chunky or chop with a sharp knife.
- Heat a medium sized pot and add butter. Add the sweet potatoes and mash with a fork or potato masher. Add the sour cream or milk a little at a time then add the onion mixture. Blend with a wooden spoon until fully incorporated and adjust S & P to taste.
