4-STEP CHICKEN MARENGO

Steps:
- Season the chicken with salt and pepper, to taste, and lightly dredge in flour. In a large saute pan, heat the oil over medium-high heat and add the chicken. Brown on both sides, until nicely golden, about 3 minutes per side. Remove from the pan and set aside on a plate. In the same pan, add more oil, if needed, along with the onion, mushrooms and peppers and saute until softened and fragrant, but not limp, about 5 minutes. Season with salt and pepper, to taste. Stir in the tomato paste and cook a few minutes to cook out the raw flavor. Turn up the heat, and add the wine/wine to deglaze the pan and let it reduce for 2 or 3 minutes. Add the beef broth and tomatoes. Once the mixture begins to bubble, add the browned paillards and any juices from the chicken and reduce the heat to a simmer. Cook until the chicken is warmed through, about 3 minutes. Turn the heat off and stir in the butter. Transfer to a serving platter and serve immediately.
CRANBERRY WHIPPED CREAM
I came up with this recipe when I decided to do something a little different with cranberries. I used it to top a tart filled with chocolate truffle filling and it worked out great.

Steps:
- Combine water and sugar in a saucepan and place over high heat. When mixture comes to a boil, add cranberries and return to boil. Simmer for ten minutes. Strain mixture, squeezing to preserve as much liquid as possible. Discard the berry pulp. Allow cranberry sauce to cool, covered, at room temperature.
- Combine cream and sugar in large bowl. Beat with hand mixer until it forms stiff peaks.
- In a large bowl, stir 1/4 of the whipped cream into the cranberry sauce. Once combined, fold the remaining cream into the mixture, half at a time.
- Store, covered, in the refrigerator.

CHOCOLATE AMARETTO MOUSSE PIE
If you love chocolate and almonds, you'll love this! A very rich, decadent dessert I serve for special occasions. I imagine the leftovers could be frozen but, I'm not sure as there has never been any left over! Prep time does not include 3-5 hour chilling time.

Steps:
- Line a 9 inch pie pan with aluminum foil (as smoothly as possible).
- Melt 1 cup of morsels with 2 teaspoons butter over medium heat.
- Spread melted chocolate evenly in bottom and up sides of pie plate to form the"crust" (shell).
- Place in freezer for at least 30 minutes.
- Meanwhile in medium sauce pan, place remaining morsels, butter, condensed milk, and salt.
- Cook over low heat till chocolate melts, stirring continuously.
- Add water and continue stirring.
- Cook for 5 minutes.
- While still stirring, add amaretto and cook for 5 more minutes or until mixture thickens.
- Cool mixture to room temperature.
- Add some of the whipped cream to the chocolate mixture, stirring briskly.
- Gently fold remaining whipped cream into chocolate mixture.
- Remove chocolate"crust" from freezer, remove foil from shell.
- Pour chocolate mixture into chocolate shell crust.
- Chill for at least 3 1/2 hours before serving.
- *Slicesmay be garnished with a dollop of whipped cream which can be lightly sprinkled with slivered or crushed almonds.

CHICKEN MARENGO
Try a chicken casserole with a difference and whip up this version with mushrooms, olives, tomato and parsley

- Heat the oil in a large flameproof casserole dish and stir-fry the mushrooms until they start to soften. Add the chicken legs and cook briefly on each side to colour them a little.
- Pour in the passata, crumble in the stock cube and stir in the olives. Season with black pepper - you shouldn't need salt. Cover and simmer for 40 mins until the chicken is tender. Sprinkle with parsley and serve with pasta and a salad, or mash and green veg, if you like.

Steps:
- Wash chicken pieces and pat dry.
- Season chicken and dredge in flour, shaking off excess.
- Heat oil and butter in large skillet over medium-high heat.
- Brown chicken pieces, a few at a time, then remove to a side plate as they are browned and continue with other pieces, adding more oil and butter if necessary.
- Quickly brown mushrooms, then remove to a side plate.
- Add onions to pan and cook over medium-low heat for 5 minutes.
- Stir in broth.
- Add tomatoes, green pepper, olives, garlic and allspice; simmer for 3-4 minutes.
- Return chicken to pan; cover and simmer for 25-30 minutes, or until tender.
- Arrange chicken on platter and keep warm in oven.
- Stir lemon juice into mixture in pan, add mushrooms and bring to the boil.
- Boil until reduced by half.
- Pour over chicken and serve.
CHOCOLATE ALMOND MERINGUE TORTE

- Pre-heat oven to 300°F.
- Set Ice Cream or Dairy-free frozen dessert out to soften slightly.
- Process first three ingredients until finely mixed.
- Whip egg whites and sugar to stiff peaks.
- Fold almond mix into the egg whites.
- Spread onto parchment-lined baking sheets, forming two circles, approximately 9" round and 1/4-1/2" thick.
- Bake until firm (check after 20 minutes). Cool.
- Set one meringue on a plate and spread soft ice cream over it. Top with second meringue and place in the freezer for 30 minutes.
- Heat Soy milk to a simmer, and pull off of the heat. Stir in finely chopped chocolate or chips. Stir vigorously until this mixture is thick, slightly cooled and glossy (about 5 minutes).
- Pour Chocolate sauce over frozen ice cream cake, sprinkle the edge with the almonds and place back in freezer until ready to serve.
