EASY TORTELLINI SALAD
A blend of spinach and three-cheese tortellini and marinated artichoke hearts. A perfect summer side dish or main dish! Try my Lite Italian Salad Dressing recipe with this salad!

Steps:
- Fill a large pot with lightly salted water and bring to a rolling boil. Stir in spinach and three-cheese tortellini and return to a boil. Cook the pasta uncovered, stirring occasionally, until the pasta has cooked through but is still slightly firm, 10 to 11 minutes.
- Drain well, and allow tortellini to cool.
- Toss together the tortellini, grape tomatoes, artichoke hearts, olives, red onion, carrots, and dressing in a large bowl.
- Cover and refrigerate until chilled, at least 3 hours or overnight.

This recipe came from Marie's brand Salad Dressing. My DD likes to make it as her contribution to pot luck dinners and she never fails to get compliments! (Cooking time is chill time)

Steps:
- Prepare tortellini according to package directions; drain.
- Rinse with cold water; drain.
- Combine tortellini and next 5 ingredients in a large bowl.
- Arrange tomato wedges or grape tomatoes over salad.
- Cover and chill 2 hours.

TASTY TORTELLINIS
Serve these marinated tortellinis as an appetizer with party toothpicks. Can also be used for a nice pasta salad lunch in larger size servings ...Optional ingredients: celery chunks, snow peas, artichoke hearts, salami or cheese chunks, green, yellow, or red pepper chunks, thin carrot slices, pearl onions (use your imagination!). Garnish with fresh parsley, if desired.

- Cook tortellini according to package directions--al dente.
- While tortellini is cooking, prepare marinade. Combine vinegar, mustard, garlic, basil, chopped parsley, onions, and salt and pepper to taste.
- Drain tortellini and rinse in cold water. Pour marinade over tortellini, add olives (and optional ingredients, see above) and refrigerate. When ready to serve, add Parmesan and some fresh parsley for garnish, if desired. Serve with toothpicks.

- Place first 8 ingredients into a zip lock bag and marinate for 1 hour.
- Then grill till browned about 2-3 minutes each side.
- In a blender blend garlic,olive oil,balsamic vinegar,.
- rosemary.
- Dice cooked onions, peppers (Charred skin removed), zucchini, and mushrooms.
- Mix all remaining ingredients in a bowl toss adding dressing and serve room temp or chill and serve adding more oil and vinegar if necessary.
WARM TORTELLINI SALAD
Delicious and simple--you can have this on the table in mere minutes. Use bottled vinaigrette or make your own. I used a double recipe of Bergy's Lemon Garlic Dijon Vinaigrette (recipe #96361)--it was fantastic and complimented the dish perfectly. I served topped with freshly ground black pepper and freshly grated Parmigiano-Reggiano.
