MARINARA DIPPING SAUCE
Serve this traditional marinara sauce with warm bread. Garlic bread would also be delicious!

Steps:
- In a large skillet, heat oil and saute garlic until light brown and softened. Be careful not to burn the garlic. Stir in tomatoes, sugar, water, basil, and salt and pepper.
- Bring contents of the pan to a boil. Cover and simmer on low heat for approximately 45 minutes, stirring occasionally. Serve warm.

WALT'S TERIYAKI MARINADE AND DIPPING SAUCE
This is an old way of making a teriyaki sauce with honey instead of sugar, giving it a more pleasing sweetness. It's great for marinading and dipping with any kind of meat dish.

Steps:
- Blend ginger, soy sauce, honey, garlic, and onion in a bowl.
- Add meat to marinade for at least one hour or refrigerate meat in marinade overnight.
- After marinating meat, drain the marinade and add it to a 1/2 cup of water.
- Bring it to a boil for 3-5 minutes and use it for a meat dipping sauce during the meal.
- Excellent for pork, beef or chicken.
ANOTHER FIVE SPICE MARINADE & DIPPING SAUCE
Different from previously posted version on Zaar. I love Five Spice Powder and am always searching for new ways to use it in recipes. This version was oringally from a magazine clipping, although I am not sure which one. Marinade is enough to use for 1 pound of meat. (Find sesame oil and Five Spice powder in Asian markets; chili oil is oil flavored with hot chili peppers)

- Whisk together ingredients and chill until ready to use.
- To USE: Divide mixture in half and use one portion to marinade meat at least 1 hour (chicken, beef, or pork); after meat has marinated, drain and discard and then cook meat according to your preferred method. Boil remaining portion of marinade until reduced slightly and use to brush on meat while cooking or as a dip for cooked meat.

MARINATED SEAFOOD SKEWERS WITH A DIPPING SAUCE
Another experiment and I think another success, to me this was a wonderful combination of flavours and the fish was gorgeous. I used Tuna, Salmon and Prawns but feel free to experiment with other fish, just remember you need quite thick fish for skewers. I served mine over stir-fry vegetables which not only went really well but made for a very yummy, healthy, light dinner enjoyed by us all. The ingredients listed below was enough to make 6 skewers I allowed for 2 per person so if you have bigger eaters you will have to adjust amounts to make more. The marinade will be plenty even if you buy more seafood.

- Combine all the marinade ingredients in a large bowl or storage container, add chopped fish and prawns, refrigerate for several hours.
- Thread fish onto skewers alternating, tuna, salmon, prawn etc. reserve marinade.
- In summer these would be great done on the BBQ, as it is winter I did them under the grill about 6 inches from the heat. Cook for about 8-10 Min's or until done, turning once and basting with reserved marinade during cooking.
- Dipping Sauce.
- In a saucepan add water and sugar and cook over a medium high heat until the sugar dissolves.
- Turn the heat down, add soy, vinegar, fish sauce, lime juice, zest, sweet chili sauce, stir to combine, remove from heat, stir in coriander and serve in individual dipping bowls.
- I served mine over stir-fry vegetables, I did a mix of bean sprouts, snow peas, shredded carrot and red pepper.

SPORTSMAN'S MARINADE / BBQ / DIPPING SAUCE
This was in the little cook booklet that came with my Brinkman Smoker. Naturally I jimmied it about to suit my taste, I'm probably not through changing it but it's wonderful as it now is. I buy steaks on sale, cut them into serving size portions, put them into individual zip lock bags with some of this marinade and freeze them. Take as many as needed from the freezer the night before and let them thaw overnight in the fridge, when evening comes they will be properly marinated and ready to grill or broil or even pan fry. I don't discard the used marinade. I remove the meat and boil the the marinade while grilling the meat then pour the now safe marinade over the meat and serve.

- Pour into a blender or use a wand to puree.

THAI MARINATED PORK WITH DIPPING SAUCE
This is a great Thai dish, that isn't too spicy. It goes great with sticky rice. Originally it called for meat sliced thinly at 1.5" x 3" and placed on thin skewers like a ribbon. But I just use pork steaks with the bone cut out, and then cut into quarters.

Steps:
- Pork& Marinade:Combine everything (but the pork) untill it's all blended together well.
- Add the pork and let sit for at least 30 minutes.
- I like to let it sit in the fridge overnight.
- Some people like to use dishes or bowls to marinade the meat, but I like to use large zipper seal bags.
- While the meat is soaking we can get going on the dipping sauce: Mix everything together and taste.
- If it's too spicy-hot, just add a little more sugar, fish sauce, and lime juice till the flavor is right.
- When it's time to cook the meat, start your grill (I prefer charcoal).
- Skewer the meat if thats what you are doing, and place the items on the grill.
- Cook both sides evenly for a couple of minutes and make sure it's cooked all the way through.
- When eating, dip the meat into the sauce and enjoy.
