Steps:

  • Put tomatoes through food mill to remove the seeds. Heat grapeseed oil in a skillet over a small level of heat and add poblano and serrano peppers, red onion, scallions, garlic and carrot. Cook until onions are translucent. Then place the mixture in blender with chipotles and blend to a smooth consistency. In a separate pot, combine tomatoes, tomato paste, habanero ketchup and Worcestershire sauce and bring to boil. Skim the white foam off the top and discard. Add red wine and continue skimming off foam. Then add the pepper mixture from the blender to pot. Stir in soy sauce, sake, chopped ginger, dry spices, molasses, rum and brown sugar. Continue cooking over a small amount of heat; at the end, add balsamic vinegar, a shot of hot sauce and olive oil. Cook for 45 minutes to 1 hour, stirring frequently until desired consistency is reached.
