TURKEY-SALAD SANDWICH
Here's a bright, fresh lunch that's ideal if, perhaps, you've overindulged (and delicious even if you haven't). A bit of lemony mayonnaise binds together roast turkey, apples, celery, and raisins. You can also serve the mixture over greens instead of bread.

- In a bowl, mix together mayonnaise, lemon zest, 1 tablespoon lemon juice, and pepper. In another bowl, mix together turkey, celery and leaves, apple, raisins, remaining 2 tablespoons lemon juice, oil, and 2 tablespoons of mayonnaise mixture.
- Spread each bread slice with about 1 tablespoon mayonnaise mixture. Top with turkey salad, dividing evenly. Garnish with cucumber and watercress.
TURKEY MONTE CRISTO
If you like French toast and grilled cheese, you'll love a Monte Cristo. This sandwich is usually pan-fried, but baking it instead means you can use less butter and make several at the same time.

- Preheat oven to 400 degrees. Line a baking sheet with a nonstick baking mat; brush with butter. In a 9-by-13-inch baking dish, whisk together eggs and milk. Season with salt and pepper.
- Spread cranberry sauce on 4 slices of bread. Top with turkey; season with salt and pepper. Sprinkle cheese evenly over turkey. Top with remaining bread slices. Carefully transfer sandwiches to egg mixture and soak, pressing lightly with a spatula, 1 minute a side.
- Transfer to baking sheet; bake 15 minutes. Flip and bake 7 minutes more. Let rest 5 minutes before serving.

- In a small bowl, mix together mayonnaise, ketchup, and cornichons until well combined; set aside.
- Spread one side of each slice of bread with butter. Top buttered side of two slices of bread with mustard. Top each with 3 slices turkey and season with salt and pepper. Spread a quarter of the mayonnaise mixture over turkey and top each with 3 slices of tomato, 3 pieces of bacon, and 2 radicchio leaves. Evenly divide watercress between each.
- Evenly divide remaining mayonnaise mixture between buttered side of remaining two slices of bread; place on top of watercress to form sandwich. Serve with cranberry sauce, if desired.

- Place panko and milk in a large bowl; stir until well combined. Let stand 5 minutes.

- In a large skillet, heat 1 tablespoon oil over medium-high. Add onions and peppers; cook, stirring occasionally, until beginning to brown, about 7 minutes. - Cook bacon in a skillet over medium heat until crisp, 10 to 12 minutes. Transfer to paper towels to drain, and wipe skillet clean.
- Butter cut sides of roll or bun. Heat skillet over medium-high heat. Place roll or bun, buttered sides down, in skillet, and cook until golden brown, 1 to 3 minutes.
- Mash avocado and blue cheese in a small bowl. Spread mixture on bottom half of roll or bun. Top with tomato and bacon.
- Melt butter in skillet over medium heat. Add egg, and cook until white is set, about 1 1/2 minutes. Gently flip egg, and cook until yolk is runny in center but slightly set around edge, about 30 seconds. Remove from pan. Add turkey to pan, and heat through.
- Place turkey and egg on top of tomato. Top with remaining half of roll or bun, and serve immediately.
GRILLED TURKEY PARMESAN SANDWICH
Not your ordinary leftover-turkey sandwich, this grilled creation, with cheese and marinara sauce, is filled with irresistible flavor.

- Heat a medium nonstick skillet or a griddle over medium heat. Working on a clean surface, place a slice of cheese on top of each of 4 bread slices. Spread 1 to 2 tablespoons of marinara sauce over the cheese; sprinkle evenly with Parmesan. Layer each with turkey and a final slice of cheese. Top each sandwich with another bread slice, and lightly butter outsides.
- Working in batches, grill sandwiches until bread is golden brown on the bottom, about 3 minutes. Using a spatula, turn sandwiches, and grill until other side is golden brown and cheese is melted, about 3 minutes more. Slice in half, and serve warm.
