THE PERFECT RUSTIC MARINARA
Making marinara sauce is literally one of my favorite things in the world to do. There is almost no way to go wrong other than adding too much salt or too much sugar. Just blend, simmer, and let the ingredients speak for themselves. For a spicier sauce add more chili flake.

Steps:
- Heat a stockpot over medium-high heat. Cook and stir sausage in the hot stockpot until browned, 5 to 7 minutes; drain and discard grease.
- Blend tomato sauce, tomato, red wine, garlic, onion, Parmesan cheese, balsamic vinegar, basil, olive oil, thyme, oregano, black pepper, red pepper flakes, salt, and brown sugar together in a blender until desired consistency is reached. Pour mixture over sausage; bring to a boil. Reduce heat and simmer, stirring occasionally, until wine has cooked off, at least 30 minutes.

Steps:
- Heat oil in a large non-stick skillet over low heat and saute garlic for about 2 minutes; be careful not to burn. Just as the garlic begins to turn brown, remove pan from heat. Allow pan to cool, and add tomatoes, wine, water, salt and sugar. Cook over medium-high heat and bring to a boil. Reduce heat to low and simmer, covered, about 20 minutes. Remove from heat and stir in basil.

THE BEST MARINARA SAUCE
I developed this recipe with a friend to make the most of a bumper crop of tomatoes. Now we like to make huge batches-we're talking 220-pounds-of- tomatoes huge-and then give jars along with a pound of pasta as gifts around the holidays. - In a stockpot, heat oil over medium heat. Add onion; cook and stir until softened, 3-4 minutes. Add 2 tablespoons garlic; cook 1 minute longer. Add tomatoes, water and 1/2 cup basil; bring to a boil. Reduce heat; simmer, covered, until tomatoes are completely broken down and soft, about 1 hour, stirring occasionally., Press tomato mixture through a food mill into a large bowl; discard skins and seeds. Return tomato mixture to stockpot; add 1/2 cup of remaining basil, oregano and remaining garlic. Bring to a boil. Reduce heat; simmer, uncovered, until thickened, 3-1/2 to 4 hours, stirring occasionally. Add tomato paste and remaining 1/4 cup of basil; season with salt and pepper. , Add 1 tablespoon plus 1-1/2 teaspoons lemon juice to each of 3 hot 1-1/2-pint jars. Ladle hot mixture into jars, leaving 1/2-in. headspace. Remove air bubbles and adjust headspace, if necessary, by adding hot mixture. Wipe rims. Center lids on jars; screw on bands until fingertip tight., Place jars into canner with simmering water, ensuring that they are completely covered with water. Bring to a boil; process for 40 minutes. Remove jars and cool.

MARY'S SAVORY MARINARA SAUCE
This is my mom's delicious marinara sauce recipe that she kindly provided to me. I have fond memories of her making this sauce often and filling the entire house with its wonderful aroma. It has a savory tomato-y taste, a nice hint of basil, and goes well with all types of pasta (including lasagna). I also like to use it for homemade meatball heroes. I hope that you all will enjoy it as much as we do!

- Saute the garlic and onion in oil in a large pot over a medium heat until they are transparent but not browned. Add a 1/2 teaspoon each of dry oregano and basil to the onion and garlic while sauteing.
- Once the onions and garlic are transparent, add all of the tomato products, the hot water, the rest of the dry herbs, and the fresh basil leaves to the pot and mix everything together well.
- If you'd like, you can add meatballs and/or sweet Italian sausage to the sauce at this point.
- Adjust the flame to a low heat and let the sauce cook for about 2 1/2 hours, stirring occasionally.
- After the 2 1/2 hours, add the sugar and cook for another 45 minutes.
- Serve over your favorite pasta and garnish with more basil leaves, if desired. Leftovers can be frozen and reheated on the stove later.
NANCY'S MARINARA SAUCE
Steps:
- Heat the olive oil in a large heavy-bottomed pot over a medium-high flame. Add the onions and garlic and saute until the onions are translucent, about 10 minutes. Add the carrots and celery, season with salt and pepper and saute until all the vegetables are soft, about 10 minutes. Add the tomatoes and oregano and simmer uncovered over low heat until the sauce has thickened, about 1 hour. Season to taste with more salt and pepper.
MY MOTHER'S MARINARA SAUCE

- In a medium skillet, over medium heat, add the olive oil. Stir in the onions, carrots, garlic slices, and red pepper flakes. Season with salt, to taste, and cook for about 2 minutes. Add the sugar and the canned tomatoes, breaking them up with a spoon, and mix well. Cook for an additional 10 to 15 minutes over medium heat, stirring from time to time. Taste for seasoning, then stir in the basil leaves.
MOM'S MARINARA SAUCE
This recipe was given to me from my mom, who got if from her mom, who likely got it from her mom. It was originally told to me like, "a little of this, a little of that", so it was a challenge to create actual measurements to sharet it. I must admit, I have changed it up a bit, but in ways that make it more fresh and flavorful. I make it and use it for pasta, pizza from scratch, dipping sauce for bread sticks, and then freeze some for later. It's a great money saver that way. I also use fresh herbs if I have them, instead of dried but remember the measurements are smaller for fresh. Add ground meat or meatballs for pasta dishes.

Steps:
- Heat olive oil in a large skillet or sauce pot, on medium-low heat. Add onion and garlic and saute until onions are translucent.
- Add can of tomatoes, then fill empty can with water and add to mixture. Stir in paste and fill the empty cans with water and add to the mixture.
- Increase to heat to high and stir in remaining ingredients. Bring to a boil. Boil for 2 minutes, then reduce to low heat. Cover half way with lid and simmer for 15 minutes. Cover completely and simmer for one hour, stirring occasionally.
