MATAGORDA FIRE

This is a great recipe that will feed a horde. I got the recipe from a friend who taught at a high school I used to work at. He is also a published author -- Ron Rozelle. This recipe works well in a crockpot. Serve in the crockpot with baskets full of corn chips.

Steps:

  • Brown the meat and onion. Spray crockpot with Pam and then pour meat and onion mixture into the crockpot. Add all the rest. Stir well.

1 large red onion, Diced
2 lbs lean ground beef
1 (10 1/2 ounce) can cream of mushroom soup
1 (10 1/2 ounce) can cream of chicken soup
16 ounces mild salsa
1 (4 ounce) can green chilies, chopped
1 (2 1/2 ounce) can jalapenos, chopped
1 lb American cheese, shredded
12 corn tortillas, raw, diced
2 cups water

MADEIRA SAUCE

This is a great sauce to add to beef or steaks!! Madiera is a sweet to dry full bodied Portugese wine.

Steps:

  • Chop the onions and fry in butter, once softened, add the mushrooms, until golden brown. Sprinkle in the flour, gradually add warmed stock and mix well. Cover, and simmer for 15 minutes. Add the Madeira in the last 5 minutes of cooking. Season with salt and pepper to taste. Serve with roast meat or steak.
