SWEET POTATO PIE I
This recipe was shared with me by a special friend in Atlanta, GA. It has long been a favorite, and everyone who tastes it says it is the best they have ever had.

Steps:
- Boil sweet potato whole in skin for 40 to 50 minutes, or until done. Run cold water over the sweet potato, and remove the skin.
- Break apart sweet potato in a bowl. Add butter, and mix well with mixer. Stir in sugar, milk, eggs, nutmeg, cinnamon and vanilla. Beat on medium speed until mixture is smooth. Pour filling into an unbaked pie crust.
- Bake at 350 degrees F (175 degrees C) for 55 to 60 minutes, or until knife inserted in center comes out clean. Pie will puff up like a souffle, and then will sink down as it cools.

Steps:
- Place sweet potatoes and orange peel into a large pot and cover with water; bring to a boil. Reduce heat to medium-low and simmer until soft, about 10 minutes. Drain well and let cool. Discard orange peel.
- Preheat oven to 400 degrees F (200 degrees C). Line a 9-inch pie plate with pie crust.
- Mash cooled sweet potatoes with a potato masher or fork. Mix in eggs until well blended. Add pineapple juice, butter, and vanilla extract; mix until combined. Mix in flour, cinnamon, nutmeg, ginger, cloves, and salt. Mix in sugar until dissolved. Blend in heavy cream using a whisk.
- Pour sweet potato mixture into the pie crust.
- Bake in the preheated oven until a toothpick inserted into the center comes out clean, 40 to 50 minutes. Place on a cloth on a table or window sill to cool down.

Steps:
- Preheat the oven to 400°F.
- In a large mixing bowl, combine the mashed sweet potatoes, eggs, evaporated milk, corn syrup, brown sugar, butter, salt and spices.
- Beat with a wooden spoon until smooth and frothy.
- Stir in the pecans.
- Pour the mixture into the unbaked pie shell and bake for 15 minutes at 400°F.
- Reduce the oven temperature to 350°F and continue baking until cake tester inserted in the center comes out clean, about 45 minutes.
- Let pie cool before serving.
- Delicious with or without whipped cream.

- Heat 1 tbsp olive oil in a frying pan, then fry 1 halved and sliced large onion until golden.
- Add 2 large carrots, cut into sugar-cube size pieces and most of the 2 tbsp chopped thyme, reserving a sprinkling for later.
- Pour in 200ml red wine, 150ml water and a 400g chopped tomatoes, then crumble in 2 vegetable stock cubes and simmer for 10 mins.
- Tip in a 410g can green lentils, including the juice, then cover and simmer for another 10 mins until the carrots still have a bit of bite and the lentils are pulpy.
- Meanwhile, boil 950g sweet potatoes, cut into chunks, for 15 mins until tender, drain well, then mash with 25g butter and season to taste.
- Pile the lentil mixture into a pie dish, spoon the mash on top, then sprinkle over 85g grated vegetarian mature cheddar and the remaining thyme. The pie can now be covered and chilled for 2 days, or frozen for up to a month.
- Heat oven to 190C/170C fan/gas 5. Cook for 20 mins if cooking straightaway, or for 40 mins from chilled, until golden and hot all the way through. Serve with broccoli.

- Bake your pie shells according to package directions and let them cool completely.
- While your pie shells are baking, melt the butter in a skillet over medium and add the pecans and coconut. Toast your coconut and pecans in the butter until they become golden brown (roughly 10 minutes). Keep stirring constantly -- these can scorch easily. Set them aside to let them cool.
- In a large mixing bowl, beat the cream cheese and sweetened condensed milk together until creamy. Fold in your whipped topping by hand -- be careful not to "break it down" too much, but still get it incorporated nicely (it's such a fine line, isn't it?).
- Have your baked and cooled pie shells ready to fill -- it's time to start layering!
- Start by using 1/2 of your cream cheese mixture and divide that evenly between the two pie shells (so, technically, each pie will get 1/4 of the mixture).
- Drizzle 1/4 of your caramel sauce over the cream cheese mixture on each pie, use 1/4 per pie and 1/2 the jar total for this layer.
- Sprinkle 1/4 of the pecan/coconut mixture over the caramel on each pie. Again, use 1/2 of the mixture total.
- Repeat the layers, using the remaining ingredients. Place pies in the freezer overnight.
- You'll pull them out about about 20-30 minutes before serving to let them thaw a bit. You can store them in your freezer for about a month. I double wrap mine in Press-N-Seal and then add an additional layer of foil on top of that, to prevent any freezer burn.

- Preheat oven to 425°. On a lightly floured surface, roll dough to a 1/8-in.-thick circle; transfer to a 9-in. pie plate. Trim crust to 1/2 in. beyond rim of plate; flute edge. - Line a pie pan with the rolled out pie dough. Prick the dough all over with a fork then press a piece of heavy aluminum foil into the pie shell. Bake for 4 minutes until just starting to brown and remove from oven to cool.
- Combine the sweet potatoes and sugar in a large bowl. Beat in the molasses and eggs. Add the spices and orange zest and stir well. Stir in the melted butter and milk. Pour into the pie shell.
- Bake for 15 minutes at 450 degrees, then reduce to 300 degrees and continue baking for 30 to 40 minutes until the filling is firm around the edges but the center remains slightly soft.Two great tools to prevent your crust from overbrowning: One is to cut a strip of aluminum foil and circle the edge of the crust leaving it on when you bake the pie. There is also a product for sale, an aluminum circle that you lay over the pie to cover the edge. Both work nicely. Second is brushing the inside of the crust with egg white, which prevents the crust from not fully baking at the bottom of the pie.
