SUMMERTIME SWEET PICKLES
This easy recipe gives you a great way to save a bountiful crop of cukes! Your fresh cucumbers will taste great this way. This classic method is popular with all age groups.

Steps:
- In a small saucepan at medium-high heat, combine cider vinegar, salt, sugar, tumeric and mustard seed. Bring to a boil and let cook for 5 more minutes.
- Meanwhile, slice cucumbers and onion. Loosely pack the vegetables in a 1-quart canning jar or other similarly sized container. Pour hot liquid over the vegetables in the container. Refrigerate for 24 hours and enjoy! Keep refrigerated.

MAXINE'S CURRY PICKLE (A SWEET PICKLE)
This is another prized recipes from our church. It is also the "secret" ingredient in "Maxine's Potato Salad", and many other recipes. I consider this to be one of the staples in our pantry and one of the reasons I grow cucumbers.

Steps:
- Soak cucumber slices in salt water overnight.
- Drain and rinse.
- Make a syrup of last 5 ingredients and bring to a boil.
- Put cucumbers into syrup and reduce heat to below boiling point.
- Stir constantly for 4 minutes.
- Place cucumbers in hot sterile jars.
- Bring liquid back to boiling point and pour into jars.
- They will seal.

MANGO SWEET PICKLE

Steps:
- Bring water, sugar and vinegar to a boil in a large pot to make a syrup.
- Tie spices in small cheesecloth bag and drop into syrup.
- Drop chopped mango into syrup and allow to stand until syrup cools.
- Drain syrup and reheat to boiling.
- Place mangos in bowl and pour hot syrup over them.
- Repeat this process twice more, removing the spice bag the last time.
- Pack fruit into clean, hot jars leaving 1/2 inch head space.
- Seal.
- Process for 10 minutes in boiling water bath.

PENNY'S DELICIOUS NO PICKLE POTATO SALAD
This is the only potato salad I would eat as a child, because I didn't like pickles. The recipe is from my aunt. She uses garlic chive, which I have substituted by using the same amount of chive and a clove of garlic. I usually leave off the nasturtiums, but they add a nice *Zip* if you have them.

Steps:
- Peel and chop potatoes into bite-sized pieces.
- Boil or steam potatoes until just tender (should not immediately fall apart when you stick a fork in).
- Rinse in cold water to chill.
- Combine mayonnaise, mustard, thyme, salt and pepper, blend well and allow to rest at least 30 minutes (while potatoes are cooking).
- In a large bowl, combine all salad ingredients (except garnish), adding more mayonnaise if necessary.
- Garnish with egg slices.
- Chill salad (tastes best a day after you make it).
- Before serving, sprinkle with bacon bits and nasturtium blossoms.
