TANGY FRUIT SALAD
I got this recipe from dear friends many years ago, and it has been a mainstay at my house ever since. This salad is a sweet refreshing side dish or light dessert.-Darlene Alexander, Nekoosa, Wisconsin

Steps:
- Drain pineapple juice into a small bowl; set aside. In a large serving bowl, combine the pineapple, fruit cocktail, mandarin oranges, bananas, apples and strawberries if desired., Whisk the pudding mix and drink mix into the reserved pineapple juice. Fold into fruit mixture. Refrigerate before serving.

AUNT SHIRLEY'S "TROPIC-TANG" FRUIT SALAD
This is a unique Fruit Salad that is wonderful to have during the summer. (Although, I also find myself craving this during the winter months too!) I always have requests to bring this to family functions and never have any left over. As a result, I always double this recipe when preparing it for family gatherings.

Steps:
- Mix together Pineapple Chunks (with juice), Tang, and Instant Vanilla Pudding until incorporated.
- Drain juice from canned Tropical Fruit and add fruit to Pineapple mixture.
- Cool mixture until ready to serve (juice will thicken.).
- Slice bananas (just before serving) and mix ingredients together.
- Serve from bowl or from individual champagne glasses with a sprig of mint for decoration.
- NOTE: Best when kept cool or served immediately.

- Drain both pineapple tidbits and mandarin oranges; reserve juices separately.
- Mix dry vanilla pudding mix with pineapple juice.
- Add Tang to mixture and 2 Tablespoons of reserved orange juice.
- Stir in oranges, pineapple and sliced bananas.
- Refrigerate to set up.
- Bananas do not discolor in salad but get mushy if saved too long.

- Drain pineapple juice and reserve. Combine pineapple juice with sugar and bring to a boil in the microwave. Add orange jello to boiling liquid and let cool. After mixture has cooled, stir in cool whip.
- In a separate bowl, soften cream cheese with milk. Stir into jello mixture. Add crushed pineapple and blend all together.
- Put in mold and refrigerate.

My friend Maxine never ceases to amaze me with the way she prepares food. Simple and delicious. Her pasta salad is not only my favorite, but it makes a colorful presentation. Serving size, cooking and prep times are all estimates.

- Prepare packet of salad dressing with oil and vinegar, as stated on envelope.
- Place cooked pasta in a large bowl.
- Add sliced mushrooms, olives, peppers, asparagus, cheese and Italian dressing.
- Mix well.
- Add salt and pepper to taste.
- Mix well and adjust s&p or cheese to taste.
- Serve at room temperature.
- Maxine likes to arrange some of the colored vegetables on top for a prettier presentation.

MAXINE'S BLACK RASPBERRY JELLY (FOR CANNING)
The recipe for Grandma Maxine's famous jelly. Historically, she has made the jelly, canned it and froze until ready to consume.

- Crush blackberries using a food mill and reserve juice. Strain juice off of blackberries and set aside. Measure reserved juice. Add concord grape juice to reserved blackberry juice so that it totals 3 cups of juice.
- Add sugar, lemon juice and 1/2 of the box of dry jello to a pan. Bring to a rolling boil. Add certo and cook for 4 minutes.
- Put in jars and cover with paraffin wax. Seal jars by properly canning. Alternatively, store in refrigerator for a week and enjoy fresh jelly.

MAXINE'S FABULOUS CHICKEN SALAD
My cousin Maxine is a marvelous cook. I have never had a meal at her house I didn't love. Maxine taught me how to make Southern Fried Chicken, as my Grandmother and Mother did not make Fried Chicken as we do here in America. It's still one of my favorite dishes. My son loves Chicken Salad and this is his favorite.

- 1. Take the chicken breasts you have cooked, deboned, skinned, diced, and place them in a chilled bowl. Add the celery and grapes halves.
- 2. Mix the mayo with a little milk to thin. Add to the chicken, celery and grape. Mix. Add your pepper and salt. Mix. Refrigerate.
- 3. Just before serving add the toasted slivered almonds and toss to incorporate. Serve.
