MELTY CHEESE FONDUE POT

If you love dunking into a gooey baked brie or camembert, this cheeseboard-inspired dip is for you

Steps:

  • Put the brie, cream cheese, gruyère, half the parmesan, the milk and cornflour into a food processor, and blitz until smooth. Stir through the thyme and a little black pepper. Spoon the chutney into an ovenproof baking dish (ours was 15cm round) and spread it over the base. Top with the cheese mixture, spread to cover the chutney, then scatter over the remaining parmesan. It can now be covered with cling film and chilled for up to 3 days.
  • Heat oven to 160C/140C fan/gas 3. Put the baking dish on a baking tray and cook for 25 mins until bubbling. Turn the grill to a medium-high setting and grill for 2-3 mins or until golden brown and crispy on top. Remove from the oven and leave to cool for 5 mins before serving with crusty bread for dunking.

Steps:

  • Add all the ingredients except the water to your blender or food processor. add enough water to just cover. blend until smooth. add the rest of the water and blend until thoroughly combined. stirring constantly simmer in saucepan until thickened. use over macaroni, pizza, lasagna, veggies, etc. you can also add agar to make it slice-able. it also mixes well with ketchup and barbecue sauce for a wonderful veggie burger topping or tater-tot dip.

CHEESY BREAD WITH MARINARA

Soft, pillowy bread stuffed with melty mozzarella and dipped in a marinara sauce makes for an easy, crowd-pleasing appetizer or side dish. Here, store-bought sauce is doctored up with a few pantry staples, including dried oregano, garlic and red-pepper flakes, but you can use homemade sauce, too. Slice the bread or let everyone tear off pieces, like they would a fresh baguette, for a more spontaneous, cheese-pull moment. To round out the spread with something green, roast broccolini, broccoli or kale on a sheet pan in the oven as the bread cooks, then dip alongside. For a crunchier exterior, unwrap the bread and cook uncovered for the last 5 minutes.

Cheesy Bread With Marinara image

Steps:

  • Heat the oven to 400 degrees. Halve the loaf lengthwise almost all the way through, leaving it attached on one side. Open it, lay it flat and brush the insides with 2 to 3 tablespoons olive oil. Tuck in the mozzarella, then sprinkle with salt and ¼ teaspoon oregano. Close, then wrap tightly with foil. Place on a sheet pan, and bake for 20 minutes.
  • Meanwhile, in a medium saucepan, heat the remaining 2 tablespoons of oil, garlic, remaining ½ teaspoon oregano and red-pepper flakes over medium-high, stirring occasionally, until fragrant, about 1 minute. Pour in the marinara sauce and adjust the heat to bring it to a gentle boil, then stir in the sherry vinegar, if using. Reduce the heat to maintain a gentle simmer, stirring occasionally, until the bread is ready, about 15 minutes more. Season to taste with salt and pepper.
  • Transfer the sauce to a bowl or serve from the pan, and top with grated Parmesan. Slice the bread, or let everyone pull the pieces apart themselves. Keep wrapped until ready to eat.

Cheese spread on french bread. Gets nice and bubbly in the oven. Kinda tastes like pizza, goes great with beer. I loved making this with my mom as a child. -Your kids (and men) might like it as much as my siblings and I did! We called it "Goop" (I thought the title might drive people away!). My mom got this from a friend back in the 70's- she used to make it for all the guys to eat while they watched football and drank beer. Mix 6 hours ahead of time (but I can never wait that long!), then just spread on bread and pop it in the oven.

  • Mix together and let stand at least 6 hours.
  • Split 2 loaves of french bread lengthwise. Spread with cheese mixture.
  • Bake at 350 degrees fahrenheit for 20 minutes, then turn oven to broil and raise to top rack. Broil till cheese is well melted.
