CLASSIC CABBAGE ROLLS
I've always enjoyed cabbage rolls but didn't make them since most methods were too complicated. This recipe is fairly simple and results in the best cabbage rolls. - In a Dutch oven, cook cabbage in boiling water for 10 minutes or until outer leaves are tender; drain. Rinse in cold water; drain. Remove 8 large outer leaves (refrigerate remaining cabbage for another use); set aside. , In a large saucepan, saute 1 cup onion in butter until tender. Add the tomatoes, garlic, brown sugar and 1/2 teaspoon salt. Simmer for 15 minutes, stirring occasionally. , Meanwhile, in a large bowl, combine the rice, ketchup, Worcestershire sauce, pepper and remaining onion and salt. Crumble beef and sausage over mixture and mix well. , Remove thick vein from cabbage leaves for easier rolling. Place about 1/2 cup meat mixture on each leaf; fold in sides. Starting at an unfolded edge, roll up leaf to completely enclose filling. Place seam side down in a skillet. Top with the sauce. , Cover and cook over medium-low heat for 1 hour. Add V8 juice if desired. Reduce heat to low; cook 20 minutes longer or until rolls are heated through and a thermometer inserted in the filling reads 160°.

- Cook cabbage in boiling water just until outer leaves pull away easily from head. Set aside 12 large leaves for rolls. In a small bowl, combine the beef, pork, 1/2 cup tomato sauce, onion, rice, parsley, salt, dill and cayenne; mix well., Cut out the thick vein from the bottom of each leaf, making a V-shaped cut. Place about 1/4 cup meat mixture on a cabbage leaf; overlap cut ends of leaf. Fold in sides. Beginning from the cut end, roll up. Repeat., Slice the remaining cabbage; place in a Dutch oven. Arrange the cabbage rolls seam side down over sliced cabbage. Combine the tomatoes, sugar and remaining tomato sauce; pour over the rolls. Cover and bake at 350° until cabbage rolls are tender, 1-1/2 hours.

- In a large saucepan, combine the first 10 ingredients. Bring to a boil over medium heat. Reduce heat; cover and simmer for 5 minutes. - Blanch the cabbage leaves in boiling water for 3 minutes, then transfer directly to a large bowl of ice water.
- Remove the tough stem, finely dice and set aside.
- In a medium bowl, combine the ground pork, ground beef, diced cabbage stems, onion, egg, salt, and pepper, and mix until well-combined. Divide into four equal parts.
- Fold the mozzarella slices in half and roll them up.
- Form each portion of meat into a patty. Add a roll of cheese to each patty and form the meat around the cheese so it is completely encased.
- Put a meat patty on a cabbage leaf, fold in front and right side, and roll up.
- Fold the left side inwards towards the meat filling to seal. Repeat with the remaining meat and cabbage.
- Heat a bit of oil in a medium pan over medium heat. Add thecabbage rolls and fry for 3 minutes, until browned on one side.
- Turn cabbage rolls over and add the water, bullion, and butter.
- Once the water is boiling, add the canned tomatoes. Cover and cook for 15 minutes.
- Season with salt and pepper.
- Sprinkle with Parmesan cheese and parsley, then serve.

MEPSTER'S CABBAGE ROLLS
These are the only cabbage rolls I've ever made. I like the taste of the filling with the Worcestershire sauce and the basil.Serve it over rice ( that's what we like) potatoes, or noodles.

Steps:
- Core cabbage head: steam in a large pot with about 2-3 inches of water at the bottom.
- Remove outer leaves as they soften.
- Remove remaining cabbage and set aside.
- In a skillet, in hot butter, cook onion 5 minutes or until softened, stirring occasionally.
- Add tomato sauce, brown sugar, 1 teaspoon of salt and 1/4 teaspoon of pepper.
- Mix well and set aside.
- Meanwhile, in a large bowl, combine remaining ingredients, 1 teaspoon of salt and 1/4 teaspoon of pepper.
- Divide mixture into 12 portions.
- In the center of each cabbage leaf, place a portion of the meat mixture.
- Fold 2 sides of the leaf toward the center.
- From one narrow edge, roll up jelly-roll fashion.
- Secure them with toothpicks (but make SURE they're noticeable).
- Place the sauce with some chopped up cabbage that you reserved in an electric frying pan or roasting pan with a lid.
- Cover and simmer for 45 minutes to an hour in the fry pan- same for the oven at 350*.

- Bring a large pan of water to the boil, add the cabbage leaves and put a heavy ladle on top to keep them submerged. Boil for 4 mins, then drain, reserving the water.
- Meanwhile, heat the oil in a non-stick pan. Reserve 2 tbsp of the onion, then fry the rest for 10 mins until just golden. Stir in the pine nuts and cook until starting to colour. Add the spices and rice, then pour in 450ml of the reserved water. Stir in the bouillon powder, cover and cook for 15 mins until the rice is almost tender and the liquid is absorbed. Stir in the lentils, zest and mint.
- Heat the oven to 180C/160C fan/gas 4. Put a spoonful of the rice into the centre of a cabbage leaf, roll up and put in a shallow casserole dish. Repeat with the remaining rice and leaves. Cover and bake for 30 mins until the rice is fully tender.
- Meanwhile, combine the tahini, lemon juice, garlic and 3 tbsp water, and mix the salad ingredients with the reserved onion. If you're following our Healthy Diet Plan, serve half the rolls with half of the sauce and half of the salad. Cover and chill the rest to eat another day. Will keep in the fridge for two to three days. Reheat in the microwave until hot.

- Core cabbage and place in a large pot. Fill hole with vinegar and salt. Fill pot with water to top of cabbage but not flowing into the core. Bring to a boil, turn stove off and leave overnight. The next morning your cabbage is cooled and ready to work with, perfect!
- Combine ground beef, pork, cooked rice, 2 tablespoons sugar, 4 tablespoons onion, 1 tablespoon lemon juice, salt, pepper and 1/2 teaspoon paprika.
- Grab an appropriate sized handful of meat for the size of cabbage leaf and place at the core end of the leaf, roll, tucking sides of the leaf inches.
- Place on a platter seam side down.
- Continue with remaining leaves.
- Saute diced onion in the canola oil with salt, pepper and 1/2 teaspoon paprika, until translucent.
- Place in the bottom of a large roasting pan.
- Add hot water and stir to combine.
- Place cabbage rolls on top of the onion mixture, arranging smaller ones on the second layer.
- Mix tomato sauce with the brown sugar and lemon juice; pour over the cabbage rolls.
- Cover and bake at 325 degrees Fahrenheit for 1-1/2 to 2 hours.

- Cook rice per package instructions and set aside. Preheat oven to 350 degrees Fahrenheit at this point too.
- In a large bowl, combine ground beef with Worcestershire sauce, egg, cooked rice, onion, parsley, garlic, salt, black pepper, dill, onion powder, red chili flakes (if using) and 1/2 cup of tomato sauce. Mix until well combined.
- To a large pot of boiling water, add head of cabbage and boil for 8 to 10 minutes (carefully turn over partway through). Carefully remove. Don't discard water because you will need to re-boil the cabbage as you start to peel off the leaves and you will need some of the water for your sauce.Note: Don't fill the pot all the way up because the cabbage will displace some of the water. Before boiling water, test how much the water will displace by placing the head of cabbage in the pot.
- Once cabbage is cool enough to handle, carefully remove leaves and cut out core from each leaf. Once you start taking leaves off, you'll likely need to add the cabbage back to the boiling water (to soften more leaves). Just boil for another bit, let cool enough to handle and continue removing leaves.
