CHOCOLATE CHIP MERINGUE BARS
I found this recipe in a little soft cover recipe book called "Grandma's Best Desserts" put out by "Taste of Home". This recipe sounded good to me so I tried it last night and yes, I think it is really yummy. It is something a little different.

Steps:
- In a mixing bowl, cream shortening, 1/2 C brown sugar and 1/2 C sugar.
- Add egg yolks and mix well.
- Combine the water and vanilla.
- Combine flour, baking soda and salt; add to the creamed mixture alternately with with water/vanilla mixture.
- Mix well.
- Spread into a greased 15x10x1 inch baking pan.
- Sprinkle with chocolate chips.
- In a small glass or metal mixing bowl, beat egg whites until soft peaks form.
- Add the remaining brown sugar, 2 tablespoons at a time, beating well after each addition.
- Beat until stiff peaks form.
- Spread over chocolate chips.
- Top with peanuts.
- Bake at 350 degrees for 30-35 minutes.

MERINGUE TOPPED MAGIC COOKIE BARS
We loved the addition of brown sugar meringue to this classic recipe. We loved it so much, next time we may add more! The possibilities are endless to the different meringue flavors you can add to this. They're sweet, salty, and delicious.

Steps:
- 1. Heat oven to 350 degrees. Coat 13x9-inch baking pan with no-stick baking spray. Alternate method: Line 13x9-inch pan with greased (sprayed) foil. Make sure foil overhangs the edges of the pan for easy removal.
- 2. Combine graham crackers and butter in small bowl. Press into bottom of prepared pan.
- 3. Pour sweetened condensed milk evenly over crumb mixture.
- 4. Layer evenly with with chocolate chips, coconut and chopped nuts. Press down firmly with fork.
- 5. Bake for 15 minutes.
- 6. While cookie bars are baking, prepare the meringue. Beat 3 egg whites until frothy. Gradually add 1 cup of brown sugar. Beat until stiff peaks form about 7 minutes.
- 7. Spread meringue over cookies. Bake at 350 for another 15 minutes.
- 8. Loosen from sides of the pan while still warm. Cool on wire rack. Cut into bars.
- 9. VARIATIONS: SUBSTITUTE chocolate chips or nuts with candy-coated pieces, dried cranberries, raisins, mini-marshmallows or butterscotch pieces.
CHOCOLATE MERINGUE BARS
I love layered bar cookies and this one appealed to me because the use beaten egg whites instead of the more common condensed milk looked quite interesting. The resulting cookie is a soft thin blondie-like bar with with a gooey layer of chocolate topped with a crispy shell.

- Pre-heat oven to 325 degrees.
- Beat butter, sugars, egg yolks, and 1 teaspoon vanilla until soft and creamy. Mix dry ingredients together and add into the butter-sugar bowl along with the milk. Spread evenly into 9"x13" pan. Sprinkle with a laer chocolate chips.
- Beat egg whites to soft peaks, beat in brown or white sugar and vanilla. (Brown sugar yields a slightly more tawny flavor.) Fold in nuts (if using) and spread over the chocolate chips.
- Bake 30-35 minutes.
- Remove from the oven and allow to cool completely before cutting and serving.

- Place egg whites in a small bowl; let stand at room temperature 30 minutes., Preheat oven to 325°. In a large bowl, cream butter, 1/2 cup brown sugar and sugar until light and fluffy. Beat in egg yolks, milk and vanilla. In another bowl, whisk flour, baking powder, baking soda and salt; gradually beat into creamed mixture. Press into a greased 15x10x1-in. baking pan., With clean beaters, beat egg whites on medium speed until foamy. Gradually add remaining brown sugar, 1 tablespoon at a time, beating on high after each addition until brown sugar is dissolved. Continue beating until thick and glossy. Stir in chocolate chips and pecans. Spread over dough in pan., Bake on a lower oven rack until meringue is lightly browned, 25-30 minutes. Cool completely in pan on a wire rack. Using a serrated knife, cut into bars. Store in an airtight container.

- Place egg whites in a large bowl; let stand at room temperature for 30 minutes. Beat egg whites until foamy. Add cream of tartar and salt; beat until soft peaks form. Gradually add sugar, 1 tablespoon at a time, beating on high speed until stiff peaks form, about 6 minutes. Beat in cocoa. Fold in chocolate chips and nuts if desired., Cut a small hole in the corner of a pastry or plastic bag; insert # 806 round pastry tip. Fill the bag with meringue.
