~ SWEET CINNAMON MEXICAN RICE ~
Not too sweet, and oh so creamy. My family rates this rice right up there with my other rice recipes. It's so easy to make, with just 4 ingredients. The hardest part of the recipe is the waiting... A great ending to any Mexican dish it's great anytime for that matter. Enjoy!

- 1. Place all ingredients in a medium - large sauce pan, stir to combine and bring to a boil then reduce heat to low and simmer for 40 - 45 minutes or until rice is cooked and is nice and liquid is nice and creamy. Stirring occasionally.
- 2. Can cool a bit and serve warm or if serving cold, it's great with a dollop if whipped cream and a sprinkle of cinnamon. Enjoy! My kids love it!
MEXICAN RICE CASSEROLE

- Preheat the oven to 375 degrees F.
- Heat the oil in a large dutch oven and add the garlic and onions. Cook, 3 to 4 minutes. Reduce the heat to low and add the rice. Stir constantly, making sure the rice doesn't burn. Cook over low heat, about 3 minutes.
- Next, add the whole tomatoes, diced tomatoes, cumin, salt, pepper, cayenne and turmeric. Stir to combine and let cook, about 2 minutes. Finally, add the chicken broth and stir the mixture together. Bring the mixture to a boil, and then reduce heat to low. Cover, and simmer until the rice is not quite done, 10 to 15 minutes.
- Top with the cheese, and then bake with the lid off until the cheese is melted and the rice fully cooked, about 15 minutes. Serve with chopped cilantro.
MEXICAN RICE PUDDING ("ARROZ CON LECHE")
Steps:
- Put the water, rice, and cinnamon stick in a medium-size heavy saucepan set over medium-high heat. Bring to a boil, uncovered, and cook until the rice is tender, about 18 minutes. Strain out the liquid, discard the cinnamon and reserve the rice. Return the rice to the saucepan. Stir in the evaporated milk, condensed milk, and whole milk. Continue cooking over medium-high heat until the mixture comes to a boil. Reduce the heat to low and cook, uncovered, stirring constantly, until the mixture is thick, about 20 minutes. Add the raisins, and stir well. Transfer the pudding to a serving bowl. Dust the top of the pudding with ground cinnamon and serve.
MEXICAN CINNAMON RICE
Using brown rice adds more fiber and is a little easier on the blood sugar if you happen to be a diabetic. This is a different rice to serve with Mexican dishes. This recipe goes especially well with chicken topped mole. The recipe is adapted from a Betty Crocker cookbooklet, March 1994.

- Rinse rice well under running water; drain.
- Cook the onion and garlic in the margarine until tender; stir in drained rice and brown lightly.
- Stir in remaining ingredients, reserving the cilantro.
- Heat to boiling, stirring once or twice; reduce heat, cover and simmer until rice is tender and stock has been absorbed; approximately 40 to 45 minutes.
- Remove from heat; fluff rice lightly with fork; cover and allow to rest for about 5 to 10 minutes.
- Stir in cilantro and serve.

- Bring rice, water, milk, raisins, and margarine to a boil in a saucepan over medium-high heat, stirring occasionally. Reduce heat to low, cover, and cook until liquid has absorbed and rice is tender, about 15 minutes. Mix together cinnamon and sugar, sprinkle over rice to serve.

- Rinse the rice lightly with cold water, put it in a pot and add the cinnamon stick. Cover with water about 1 cm (1/2 inch) more or less and turn the heat to medium.
- Once the water begins to boil, low the heat to a minimum and let it simmer, uncovered, for about 10-15 minutes, always taking care that the water does not evaporate completely.
- As soon as it comes to a boil, low the heat again to a minimum and continue cooking for about 15 minutes, stirring the rice occasionally to help it not stick to the bottom of the pot.
