BRAISED DUCKLING IN MOLE POBLANO

Braised Duckling in Mole Poblano image

Steps:

  • In a heavy cast iron pot or Dutch oven, heat the sesame oil over a fire. Rub the pieces of duck with the salt and pepper, and then brown them in the hot sesame oil until they have a rich, brown color. Remove the pieces of duck and set aside in a warm place. Saute the onion, sesame seeds, chile pasilla, chile ancho and poblano chile in the same pot until the chiles are tender. Add the chicken broth, chocolate, pineapple, bread, crushed plantain, garlic, peanut butter and sugar. Scrape the seed from the vanilla bean into the mixture. Bring the mixture to a boil and the decrease the heat to a simmer by moving the pot to the side of the fire. Let the sauce simmer for 30 minutes. Remove from the heat and puree the mole -- do not seal the blender airtight while pureeing a hot liquid -- and then return it to the pot. Put the pieces of duck in the mole and simmer for 1 1/2 hours. Remove the duck from the mole and serve with the sauce on the side.

2 tablespoons sesame oil
2 (4-pound) ducks, cleaned and cut into quarters
Kosher salt and cracked black pepper, to taste
1 cup diced yellow onion
1 tablespoon sesame seeds
1/2 cup seeded and minced chile pasilla
1/2 cup seeded and minced chile ancho
1/2 cup roasted, peeled and seeded poblano chile
1 gallon chicken broth
1/2 cup grated bittersweet chocolate
1/2 cup diced pineapple
1/2 cup white bread, torn into small pieces
1/2 cup crushed ripe plantains (banana may be substituted)
3 tablespoons minced garlic
3 tablespoons creamy peanut butter
3 tablespoons granulated sugar
1 split vanilla bean (you can substitute 1 teaspoon vanilla extract)

MOLE POBLANO SAUCE

Mole is a rich, dark, reddish-brown, smooth sauce made spicy and robust with a creative blend of seasonings that most often includes dried chiles, onion, garlic, and ground sesame or pumpkin seeds. Its best-known ingredient is Mexican chocolate which is used sparingly. The chocolate, flavored with cinnamon, almonds, and vanilla, provides richness to the sauce without adding a cloyingly sweet aftertaste. In Mexico, mole, commonly served with poultry, is prepared in hundreds of ways. Its roster of ingredients can number few as four and as many as four dozen.

Steps:

  • Combine dried chiles, tomatoes, onion, tortilla pieces, raisins, garlic, 1 tablespoon sesame seeds, cloves, and coriander in a bowl. Puree small amounts of this mixture in a blender until smooth.
  • Melt shortening in a skillet over medium-high heat. Add the puree and saute, stirring frequently, about 10 minutes. Add broth and chocolate, and cook over very low heat until sauce is very thick, about 45 minutes. Garnish with remaining sesame seeds.

  • Stem chiles; shake seeds into a bowl. Tear chiles into pieces; set aside. Measure 4 tbsp. chile seeds (discard the rest) and 4 tbsp. sesame seeds into a small skillet set over medium heat.
  • Heat oil in an 8" skillet over medium heat. Working in small batches, add chiles and cook, turning, until toasted, about 20 seconds. Using a slotted spoon and reserving oil in skillet, transfer chiles to paper towels to drain.
  • Working in 3 batches, put 1⁄3 of the chiles, 1⁄4 cup soaking liquid, and 1⁄4 cup stock into a blender; purée. Set a sieve over a bowl and strain chile mixture, pushing it through sieve with a rubber spatula; discard solids.
  • Return skillet with oil to medium heat. Working with one ingredient at a time, fry the almonds, peanuts, pumpkin seeds, and raisins until toasted, about 1 minute for almonds, 45 seconds for peanuts, 20 seconds for pumpkin seeds, and 15 seconds for raisins.
  • Set a fine strainer over an 8-qt. Dutch oven. Strain all but 2 tbsp. oil from skillet into Dutch oven; set aside. Return skillet to medium-high heat.
  • Heat reserved Dutch oven over medium-high heat. Season turkey breasts with salt. Brown each breast, turning once, for 12 minutes. Transfer turkey to a plate.
  • Heat oven to 325°. Nestle turkey in mole sauce. Bake, covered, until an instant-read thermometer inserted into turkey reads 150°, about 1 hour. Transfer pot to a rack; let rest 20 minutes.
