EASY MICROWAVE CARAMELS
These caramels were "homework" for a candy-making class that I took some time ago...and I've repeated that assignment over and over since! I usually make an extra batch and freeze it for company or last-minute gift-giving. After only about 20 quick seconds in the microwave, the frozen caramel is soft enough to cut, wrap and pack into a candy jar.

Steps:
- In 2-qt. microwave-safe pitcher, combine the butter, sugar, syrup, milk and salt. Microwave on high for 2-3 minutes, stirring once after every minute. When butter is melted, stir well. Attach microwave candy thermometer. Microwave on high for about 8 minutes or until mixture reaches 245° (firm-ball stage). No stirring is needed. Remove from microwave; stir in vanilla and walnuts. Let stand for 10 minutes, stirring well several times. Pour into buttered 13x9-in. pan (smaller 11x7-in. pan yields thicker candy as shown in photo). Refrigerate until cool. Invert pan. Carefully tap out whole block of candy; cut in squares. Wrap in waxed paper and store in refrigerator. (Can also freeze.)

- Lightly butter 9x9 inch baking pan.
- Combine caramels and water in 2 quart measuring cup and cook on high until caramels softened slightly, about 2- 3 mins.
- Stir through, using wooden spoon to melt completely.
- Blend in nuts, mixing well.
- Pour into prepared pan and refrigerate until firm.
- Cut into 1-inch squares.

- Combine 1/2 cup butter and marshmallow crème in bowl. Microwave, stirring once, 1 1/2-2 1/2 minutes or until melted. Stir until well mixed. Stir in 4 1/2 cups powdered sugar; mix well. Place onto surface lightly sprinkled with powdered sugar; knead in up to 1/2 cup additional powdered sugar with hands until mixture is firm and no longer shiny.
- Divide mixture into 6 equal parts. Shape each into 5x1-inch log; wrap in plastic food wrap. Place logs onto ungreased baking sheet. Freeze at least 2 hours or overnight until firm.
- Line another baking sheet with waxed paper. Set aside. Place chopped nuts on another sheet of waxed paper. Set aside.
- Place caramels, 2 tablespoons butter and half & half in 2-quart saucepan. Cook over medium heat, stirring often, until caramels are melted and smooth. Reduce heat to low to keep caramel mixture warm.

- Microwave on high for 3 minutes and 5 to 15 seconds. ( I recommend starting with the shorter time of 3 minutes 5 seconds, since I'd rather have my caramels too soft than too hard). Remove from microwave and stir and scrape down the sides of the bowl.

- Line a pan with parchment paper and spray paper with baking spray. If you want taller caramels use a 9 x 9 pan. If you want short caramels use a 9 x 13 pan. If you want medium sized caramels use an in between sized pan. That's what I did.
