- In a large bowl, combine oats and brown sugar. Stir in butter and corn syrup. Press into a greased 9-in. square microwave-safe dish. , Microwave, uncovered, on high for 1-1/2 minutes. Rotate a half turn; microwave 1-1/2 minutes longer. Sprinkle with chocolate chips. Microwave at 30% power for 4-1/2 minutes or until chips are glossy; spread chocolate evenly over top. , Refrigerate 15-20 minutes before cutting.

DELICIOUS RASPBERRY OATMEAL COOKIE BARS
One of my favorite cookie bar recipes.

Steps:
- Preheat oven to 350 degrees F (175 degrees C). Grease one 8 inch square pan, and line with greased foil.
- Combine brown sugar, flour, baking soda, salt, and rolled oats. Rub in the butter using your hands or a pastry blender to form a crumbly mixture. Press 2 cups of the mixture into the bottom of the prepared pan. Spread the jam to within 1/4 inch of the edge. Sprinkle the remaining crumb mixture over the top, and lightly press it into the jam.
- Bake for 35 to 40 minutes in preheated oven, or until lightly browned. Allow to cool before cutting into bars.

These are so good. Fast and easy too. They are very versatile, any jam will work but our personal favorite is raspberry.

Steps:
- Place dry ingredients in a bowl.
- Stir in oats and sugar.
- Cut in margarine until crumbly.
- Pat 2/3 of crumbs in a 11 by 17 inch pan.
- Spread with jam and top with remaining crumbs.
- Bake at 375° for about 45 minutes (or until light brown around edges).
- Cool and cut into bars.

- Preheat oven to 350°. In a large bowl, mix the first five ingredients. In a small bowl, mix melted butter and vanilla; add to oat mixture, stirring until crumbly. Reserve 1 cup mixture for topping., Press remaining mixture onto bottom of a greased 9-in. square baking pan. Spread jam over top to within 1/2 in. of edges. Add crushed graham crackers to reserved topping; sprinkle over jam., Bake 25-30 minutes or until edges are golden brown. Cool in pan on a wire rack. Cut into squares.

- Preheat the oven to 350 °F. Spray a 9×13-inch rectangular springform pan with cooking spray, or line a normal 9×13-inch pan with aluminum foil, extending over the sides of the pan, then spray with cooking spray.
- In a large, microwave safe bowl, melt the butter. Add in the flour, rolled oats, 1 cup (213 grams) of the brown sugar, salt, baking powder, vanilla extract, and lemon zest. Stir to combine; no streaks of flour should remain. The mixture will be quite thick and it may be easiest to mix with your hands.
- Set aside 1 1/2 cups of the oat mixture. Press the rest into the bottom of the prepared pan, using the bottom of a glass to push the dough into a solid, flat layer. Spoon the jam over the bottom crust and spread evenly with a knife. Add the remaining 1/2 cup brown sugar to the reserved dough. Using your fingers, crumble the dough and mix with the additional sugar. Crumble this over top the layer of jam.
- Bake for 30-35 minutes, until the jam is bubbling and the top crumble is golden brown. Remove from the oven and cool completely. To serve, run a sharp knife along the inside edge of the springform pan or lift the entire layer of jam bars from the pan using the aluminum foil as a handle. Slice into bars and serve.

- PREP: Preheat the oven to 350 degrees F. Line an 8x8-inch pan with parchment paper (I don't recommend foil -- it can make the jam taste metallic), leaving an overhang for easy removal, and set aside. Melt the butter and then set aside to let it slightly cool. (Hot butter will melt the sugars and cause greasy bars.)
- WET INGREDIENTS: Mix together the melted (but cooled) butter, brown sugar, and vanilla. Whisk to combine, taking your time until the butter and sugar integrate; it will seem like they won't, keep whisking until completely integrated.
- DRY INGREDIENTS: Add in the flour, oats, salt, and baking soda. Mix with a wooden spoon or spatula until a thick dough is formed. Press a little over half of the mixture (just eyeball it) into the bottom of the pan. Press into one even layer. Bake for 8 minutes and then remove.
- ADD JAM: Gently add the jam on top of the base avoiding the edges of the pan; otherwise, it will leak out and burn on the sides. Gently spread the jam, being careful to not press it into the base. Sprinkle the remaining oat mixture on top of the jam (don't press it in).
