MICROWAVE PEACH JAM WITH ORANGE LIQUEUR

This recipe is from the book "Small Batch Canning" by Topp and Howard. I haven't made this yet but the peaches are starting to hit the farmer's market and it looked simple and easy.

Microwave Peach Jam With Orange Liqueur image

Steps:

  • Place peaches and sugar in a deep 8 cup microwavable container.
  • Stir in lemon juice.
  • Microwave, uncovered, on High (100%) for 7 minutes, stirring twice.
  • Microwave uncovered, on High for 12 to 15 minutes or until mixture will form a gel, stirring every 4 minutes.
  • Stir in liqueur.
  • Ladle into sterilized jars and process 5 minutes in boiling water.

3 cups peaches, peeled and chopped
2 cups granulated sugar
2 tablespoons lemon juice
2 tablespoons orange liqueur (or frozen orange juice concentrate, thawed)

Microwave Peach Jam image

Steps:

  • Mash peaches with a potato masher.
  • Combine peaches with pectin, sugar, ascorbic acid, and lemon juice, if desired, in a deep 2-quart casserole.
  • Cover and microwave 3 to 4 minutes or until mixture boils 1 minute.
  • Remove from microwave, continue to stir 2 minutes.
  • Pour into freezer containers; cover and freeze.
  • To serve, let jam thaw in refrigerator.
  • Store jam in freezer up to 1 year, or in refrigerator up to 1 month.
  • Yield: 2 half pints (about 14 calories per tablespoon).

  • Measure crushed peaches into a large pot. Add lemon juice and pectin; stir well. Place on high heat and, while stirring constantly, bring to a full rolling boil with bubbles over the entire surface. Add the sugar and spices all at once and heat again to a full bubbling boil. Boil hard for 1 minute (set a timer), stirring constantly.
  • Remove from heat; skim foam off the top. (We keep the foam in the refrigerator and enjoy it on toast for the next couple of days. I love it warm straight off the stove as well!)
  • Pour immediately into sterile canning jars. Fill the jars to 1/4 inch from the top. Seal them and process 5 minutes in a boiling water bath.
