PLUM ORANGE JAM
We put our homegrown plums to delicious use in this quick and easy jam. It's my favorite thing to serve with buttermilk biscuits. -Kathy Rairigh, Milford, Indiana

Steps:
- In a Dutch oven, combine plums and orange juice; bring to a boil. Reduce heat; simmer, covered, 5-7 minutes or until softened, stirring occasionally. Stir in pectin. Bring to a full rolling boil over high heat, stirring constantly. Stir in sugar, orange zest and cinnamon; return to a full rolling boil. Boil and stir 1 minute. , Remove from heat; skim off foam. Ladle hot mixture into 10 hot sterilized half-pint jars, leaving 1/4-in. headspace. Remove air bubbles and adjust headspace, if necessary, by adding hot mixture. Wipe rims. Center lids on jars; screw on bands until fingertip tight., Place jars into canner with simmering water, ensuring that they are completely covered with water. Bring to a boil; process for 5 minutes. Remove jars and cool.

MICROWAVE PLUM JAM
Smooth and sweet. Luscious on toast or pancakes. Inspired as a filling for cookies and tarts. Makes wonderful gifts. This recipe makes 2 1/2 cups, try and taste.

Steps:
- Place sugar, lemon juice and plums in a deep 8 cup microwavable container (I use a pyrex measure).
- Microwave, uncovered on High for 2 1/2 minutes, stir. REPEAT twice more.
- Microwave, uncovered, on High 15 - 18 minutes, STIRRING every 4 minutes until it will form a gel.
- Ladle into hot sterilized jars. Wipe rims, remove any air bubbles, add hot lids and rings.
- Process 5 minutes in boiling water bath.

- Briefly blend the fruit and place in a large microwave-proof bowl with the sugar. Microwave on High for 3 mins, then stir well. Microwave for a further 3 mins on High, stirring after. Finish with a further 2 mins, then pour into warm sterilised jars. Once bottled and cool the jam is ready to eat. Will keep in a cool, dark place for up to 6 months. Keep in the fridge once opened.

MANGO-ORANGE JAM

Steps:
- In a large saucepan, combine mangoes, lemon, orange juice & zest, and pectin.
- Crush with potato masher.
- Heat & stir over high heat, bring to a boil.
- When it is a rolling boil, stir in the sugar, return to rolling boil, cook for TWO minutes (exactly); continue stirring.
- Remove from heat, spoon into HOT jars, leaving 1/2-inch headspace.
- Cover with lids and rings; process in a hot-water bath for 10 minutes.
SPICY FIG ORANGE MICROWAVE JAM
From Simply Recipes and it is wonderful. This makes small batches. You can use mild green or mission figs and is great as a dipping sauce too.

Steps:
- Place the ingredients in a large ceramic or glass bowl or casserole (a 2-quart Pyrex measuring cup works great), stir to combine, let sit for 30 minutes for the fruit to macerate in the sugar.
- Place in microwave.
- You will cook the fruit mixture on the high setting for approximately 15 minutes.
- As soon as the mixture starts to boil, after about 6 to 8 minutes, stop the cooking and stir.
- Continue cooking and stir every few minutes. At about 13 minutes the mixture should start to get viscous.
- If you spoon out a bit on to a small plate that has been in the freezer, you can push the mixture around a bit with your finger tip to see how thick it is.
- If it is runny, cook it a couple minutes more.
- You can also check by seeing how the jam runs off of a spoon. If it seems to firm up a bit as it drips, it's done.
- If you use a large Pyrex measuring cup, you can see that you start with close to 3 cups of liquid. You want to boil it down to 2 cups.
MICROWAVE GINGER PLUM JAM
This quick and easy jam makes only 2 1/2 cups. It makes a wonderful glaze for oven-roasted salmon. 3 cups of plums is about 10-12 plums. This recipe comes from the book Small Batch Preserving by Topp and Howard.

- Put the berries in a large glass bowl. If you are using blackberries and they are large, cut them in half. Toss the berries with the cornstarch.
- Cover the bowl with a dinner plate, and microwave for 3 minutes. Give it a stir. If your jam is still very runny, pop it back into the microwave for 30 second intervals. Be careful, it will get quite hot.
