BAKED TOMATO MAC N CHEESE CASSEROLE
Kids and adults will find this mac-n-cheese recipe to be delicious and a bit different. Tomatoes give the sauce a slight pinkish color and a flavor that is hard to top.

- Preheat oven to 350 degrees F (175 degrees C). Butter a baking dish.
- Bring a large pot of lightly salted water to a boil. Cook elbow macaroni in the boiling water, stirring occasionally until cooked through but firm to the bite, 8 minutes; drain, return macaroni to pot, and stir tomatoes into the macaroni. Cook over medium heat until the macaroni absorbs some of the liquid from the tomatoes, about 4 minutes. Remove from heat.
- Melt butter in a large saucepan over medium-high heat. Stir flour into melted butter and cook until bubbly, 1 to 2 minutes. Slowly stream half-and-half and chicken broth into the butter mixture while stirring. Bring the mixture to a boil and continue to cook while stirring continually until thickened and bubbly, 2 to 3 minutes.
- Remove saucepan from heat. Melt mild Cheddar cheese and sharp Cheddar cheese into the butter mixture one handful at a time, stirring to incorporate each addition before adding the next. Season the cheese mixture with pepper and pour over the macaroni; stir to coat pasta evenly. Transfer the mixture to the prepared baking dish and top with crushed crackers.
- Bake in preheated oven until crust is golden brown and the liquid is bubbling, 15 to 20 minutes. Cool 10 minutes before serving.

- In a large skillet, cook beef and onion over medium heat until meat is no longer pink. Add garlic; cook 1 minute longer. Drain. Add the spaghetti sauce, water, tomato sauce, tomato paste, salt and pepper. Bring to a boil. Reduce heat; simmer, uncovered, for 10 minutes., In a large bowl, combine the eggs, oil, macaroni, mushrooms, cheeses and bread crumbs. Spoon into a 3-qt. baking dish. - Cook beef, pork, onion, and garlic in hot oil until onion is golden. Add tomato sauce, tomato paste, mushrooms, carrot, salt, pepper, and sugar, and simmer 15 minutes.
- Remove the carrot and throw away--it is just there for sweetness.
- Alternate layers of macaroni, cheese, and meat in greased 2-quart casserole. Sprinkle top with cheese.

- Preheat oven to 350° F. Lightly grease a 9x13-inch baking dish or other large rectangular baking dish.
- Bring a large pot of salted water to a boil. Add the pasta and cook according to package directions for al dente. Be careful to not overcook the pasta. Reserve ½ cup of the pasta cooking water and then drain the pasta. Return the drained pasta to the pot.
- Meanwhile, heat the olive oil in a large skillet over medium high heat. Add the onion and bell pepper to the pan and cook, stirring often, until the vegetables soften, 3 to 4 minutes. Add the garlic and cook, stirring, for 30 seconds. Add the ground beef to the pan. Crumble the beef and cook until it is browned.
- Pour the marinara sauce and reserved ½ cup of pasta cooking water into the skillet. Stir in the salt and pepper. Bring to a simmer and reduce the heat to low. Simmer for about 10 minutes.

- Cook the macaroni in salted water to al dente according to the package instructions then drain and rinse with cold water to stop the cooking process.
- In a large pot, melt the bacon grease and pour in the tomatoes with the juice. Bring to a boil, then reduce the heat to medium and cook until most of the liquid has evaporated, stirring occasionally - about 10 minutes.
- Add the macaroni to the tomatoes and mix well. Add the salt and pepper. Mix well then adjust seasoning to taste. (See my note about sugar below.) Serve warm.
