MINCEMEAT-FILLED BRAID

Mincemeat has gotten such a bad rap over the years. Raisins, currants and other dried fruit, richly spiced and soaked in brandy...what's wrong with that? My family and I love it tucked inside this gorgeous-looking bread. It's perfect for breakfast or with dinner. -Loraine Steinfort, Shelbyville, Indiana

My family loves eating these zesty bread twists with a spaghetti supper. Soft and light as a feather, they have a perfect balance of garlic and oregano. Be sure to snatch one before passing them around the table.

MINCEMEAT TWISTS

This recipe is from my good friend and baking queen extra-ordinaire, Eliz. Not as intense a mince flavour as mincemeat tarts, my man says they are excellent dunked in coffee. My kids suggest a filling other than mince, such as butter/brown sugar/raisins, or butter/brown sugar/cinnamon. Though my kids don't like mince, lol!

Steps:

  • Stir together flour, brown sugar, mace and baking powder. Cut in butter till mixture resembles coarse crumbs. Sprinkle water, 1 tablespoon at a time over mixture until all is moistened, tossing gently with a fork. Form dough into a ball. Cover and chill 30 minutes or till easy to handle.
  • Combine mincemeat and orange peel (if using) in a small bowl. Set aside. Divide dough into quarters. On a floured surface roll two of the quarters into 12X4-inch rectangles. Spread each with half of the mincemeat mixture. Roll the remaining quarters into 12X4-inch rectangles and carefully place over the mincemeat. Trim uneven edges.
  • Cut each rectangle into twelve 4X1-inch strips. Twist each strip twice. Place on an ungreased cookie sheet. Me, I am a huge fan of laying down parchment paper.
  • Bake in a 375*F oven for 15 minutes. Remove from oven. Brush with milk and sprinkle with sugar. Return to oven and bake 5 to 8 minutes more or till golden. Remove from pan and cool on wire racks. Makes 24.

Steps:

  • Preheat the oven to 180c / gas 4 / fan 160c.
  • Butter a 2lb loaf tin and line the base with greaseproof paper.
  • Tip the flour into a bowl, add the cold butter and rub until the mixture forms fine crumbs. (I do this in the food processor to save time) Stir in the sugar and marzipan cubes.
  • In another bowl, lightly whisk the eggs, and then stir in the mincemeat. Stir this into the flour mixture until evenly combined.
  • Spoon in to the prepared loaf tin, smooth and sprinkle the flaked almonds over the top.
  • Bake for 1 hour until the tea bread is risen and golden brown, or a skewer inserted comes out clean, (except for it you push it through a piece of marzipan!).
  • Lightly dust the tea bread with icing sugar while it is still hot.
  • Allow to cool in the tin for 10 minutes then tip on to a wire rack to cool completely.

  • Preheat the oven to 160C/325F and spray an 8x8 inch square pan with cooking spray. Cut two strips of grease proof paper, long enough to go across the pan and have hangover on the edge to lift out the bars. Place one strip across the pan, side to side, and the other across the other way, top to bottom.
  • Place the butter and sugars into a large bowl, or the bowl of your stand mixer and beat until light and fluffy. Around 2 minutes on medium-high speed.
  • Scrape down the sides as necessary and add the allspice, salt, cornflour and flour. Mix on low speed until the mixture starts to come together, then turn the speed up to medium and mix until one lump of dough forms and comes away from the sides.
  • Place 3/4 of the shortbread mixture into your prepared pan and press into an even layer. I use the bottom of a measuring cup sprayed with cooking spray. Once spread, place in the oven for 12-15 minutes, until it's puffed up and is just set around the edges.
